Appuntamento imperdibile quello di Giovedì 2 luglio in cui ci dedicheremo a due bellissime e delicate bollicine francesi in abbinamento a piattini pensati appositamente dalla nostra Giulia. Potremo infatti degustare a calice due vini fantastici che amiamo bere e quindi proporvi. Lo “𝒁𝒆 𝑩𝒐𝒍𝒍𝒆” di Beret & Compagnie è un vino rosato, leggermente abboccato e petillant, la cui effervescenza è prodotta recuperando il proprio gas carbonico, sviluppato durante la fermentazione alcolica, e reintroducendolo durante l’imbottigliamento secondo una tecnica ideata e realizzata da Philippe Gourdon, genio della Loira della tecnica del vino. “𝑷𝒆𝒕𝒊𝒕𝒆 𝑵𝒂𝒕𝒖𝒓𝒆” è un pétillant naturel di Martin Texier , giovane vignaiolo della Valle del Rodano, prodotto da uve aromatiche come Muscat e Chasselas, vinificato senza interventi correttivi per esprimere freschezza e spontaneità. Il vino rappresenta lo stile più immediato del domaine: diretto,vivace, secco e dinamico, con bollicina fine, grande freschezza e chiusura pulita e fragrante. Per lo “Ze Bolle” abbiamo pensato a due possibili abbinamenti: un’insalata di Arance, Finocchi e Spada oppure ad una Quiche di Zucchine mentre per il “Petite Nature” potrete scegliere tra un crostino di Burro e Acciughe e la Panissa con Aiolì. 🍷Retour sur le Salon des Vignerons Samedi dernier, le Quai Liberté a accueilli le Salon des Vignerons pour une journée placée sous le signe de la convivialité ! 10 vignerons en agriculture biologique, venus de différentes régions de France, ont présenté leurs vins, proposé des dégustations et échangé avec les visiteurs dans une ambiance chaleureuse, avec un cadre unique sur la seine 🙌 En soirée, plus de 50 convives et les producteurs se sont réunis pour le dîner des vignerons ! Au programme : un menu exclusif créé par le Chef Rémi Baudis (@baudisremi) et préparé par l’équipe et les wakeurs en emploi-formation au Quai Liberté. Ho trascorso la mia infanzia a Soultzeren, un piccolo villaggio nella valle del Munster in Alsazia. Nel cuore di una bella montagna, cullato tra boschi, prati, sci e vacche dei Vosgi! Ho incontrato le vigne nel 1990 e Chantal e Jean-Pierre Frick sono stati i miei “maestri Yoda” di biodinamica, dell’arte di fare il vino e di un certo modo di vedere la vita. Nel 2009 ho cominciato una nuova avventura ad Arbois, incontrando vignaioli appassionati e appassionanti. Lo Jura è un territorio incredibile dove si producono vini senza tempo. Ma ho incontrato una fata vignaiola a Savannières, in Anjou e si è resa necessaria una migrazione verso ovest. Lì ho conosciuto Mark Angeli de La Ferme de la Sansonnière, un altro maestro capace di unire modestia, benevolenza e ricerca dell’assoluto dei terroir. Nel 2019 Philippe Gourdon, grande enologo in pensione, mi ha offerto di far rivivere lo Ze Bulle Rosé, il vino di cui è inventore a base cabernet. Avendo poche piante abbiamo cominciato un piccolo négoce come vinificatori artigianali. Il 2022 è stato il mio trentesimo raccolto. Non basta una vita intera per fare un giro completo del mestiere di vignaiolo. Dietro ogni risposta che ci porta la biodinamica nasce una nuova domanda. La nostra ricerca consiste nel permettere ai nostri vini di essere messaggeri fedeli e onesti del luogo in cui siamo nati. Bruno Ciofi is now finally devoted to his time at the Beret et Compagnie project that he founded to promote and showcase local wines that are an integral part of the region’s identity but have not been produced due to the lack of interest among local winemakers. With this negociant label, Bruno is able to assist smaller growers and chooses to work exclusively with grapes from organic and biodynamic vineyards. These are wines that showcases an excellent example of a winemaker’s skill and the quality of grapes grown in the Loire region when worked with thoughtful precision. BERET ET COMPAGNIE - ZE CHENIN 2021 UVAGGIO: CHENIN Blanc 100% ZONA: Loira AFFINAMENTO: vasche in acciaio inox DENOMINAZIONE: Vin de france 🇮🇹🍷- Color giallo dorato, il naso si apre con frutto giallo come la mela e la pera, seguono poi profumi di zenzero, gesso e note minerali. In bocca è bello teso, bella la sapidità, sorso mediamente lungo con retrogusto fruttato. Giudizio personale: Vino con un ottima beva, mi è piaciuto! Naso con diverse sfumature di profumi, dalla frutta al gesso per finire con quel tocco minerale che mi piace tanto! In bocca ha un bel equilibrio, caldo, inteso, teso, non stanca mai! Peccato per il sorso non troppo persistente! 🇬🇧🍷- Golden yellow colour, the nose opens with yellow fruit such as apple and pear, followed by scents of ginger, chalk and mineral notes. In the mouth it is beautiful tense, the flavour is beautiful, medium long sip with fruity aftertaste.
