@theairportrooms in North Adams, MA was the perfect way to end our quick weekend trip from Boston in the Berkshires✨We had a lovely orange wine to start, Burrata and sun dried tomatoes on sliced buttered baguette for an appetizer, a lovely shrimp with Achini di Pepe and Steak Frites(topped with truffle butter) for entrees, and simple olive oil cake to top off this impressive meal 🤤

Mise en place: a culinary process in which ingredients are prepared and organized (as in a restaurant kitchen) before cooking. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
One of the greatest joys in the cooking process is the prep work. You get intimate with your ingredients and get to know them as individuals. Smells, textures, colors, viscosity -- all become part of your intellectual and sensory inventory by focusing on each ingredient during the prep process. Then, you get to show them the respect they deserve by storing and organizing them properly. It's all part of mise en place!⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Join me this coming Monday for a virtual cooking class for Fairfield Public Library's "What's Cooking?" series. I will be highlighting the importance of mise en place during the class! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

You say tomato, we say…Heirloom Tomatoes!

Each tomato has its own story: tomatoes seeds are passed down season to season, and thoughtful farmers select the best seeds to produce the most delicious tomatoes. They are open-pollinated, and add a pop of color to any salad 🥗
