Brady's Distillery Accomplice Toasted Rye
.
During a previous roundtrip to Lafayette I stopped in Roanoke Virginia to specifically visit Brady's Distillery that was intentionally established to reintroduce distilling to the Star City of the South for the first time since the closure of John Casper Distilling in 1915. This occurred in 2020 when brothers Tim, Brian, and Andy Brady founded the distillery.
.
My favorite expression of their portfolio balanced by bourbon, rye, gin, and rum was this Accomplice Toasted Rye ($55) -- a single‑barrel whiskey distilled from 95% American rye and matured in new American white oak before a secondary finish in toasted oak. The rye was sourced regionally and all blending and aging occurred at the Roanoke facility.
.
This is a warm whiskey at 94 proof showing a rye spiced nose with an approachable core of vanilla and baking spices.

Point of the Bluff Estate Vineyards 2025 Estate Finger Lakes Riesling
.
I purchased this wine at a popup tasting at Walsh Family Wine where former Tarara winemaker Jordan Harris returned to Loudoun County to pour wines from his current endeavor at Point of the Bluff Estate Vineyards. This winery is situated on Keuka Lake and manages a south-facing estate vineyard that is an anomaly in #flxwinecountry. Typically vineyards face east or west -- depending on their location on the western or eastern sides of one of the 11 lakes. But the Point of the Bluff Estate Vineyard faces south as it is situated on the southern end of the Bluff of Keuka Lake, a seven-mile-long peninsula located at the fork of the lake's distinctive Y-shape, separating the East Branch from the West Branch.
.
The point of the Bluff Estate Vineyards 2025 Estate Riesling ($35) was derived from this south facing vineyard and is a fantastic wine; an impressive example of how Finger Lakes Riesling has captured the country's attention. THe wine carries a range of sensations and character -- from citrus to white peaches, to minerality -- all within an acidity and surprisingly gripping finish. Looking forward to visiting Poimt of the Bluff Estate Vineyards, Keuka Lake, and all of the Finger Lakes sometime soon. Cheers.

Maryland's Oversea Distillery's Light Aroma Baijiu
.
Baijiu is an emerging distilled spirit traditionally made from grains -- most commonly sorghum -- though wheat, rice, corn, and barley also appear depending on the region. It is typically bottled at a high proof and is known for its aromatic intensity, which varies widely across styles.
.
Baijiu’s origins trace back more than a thousand years. Early Chinese distillation techniques developed during the Song and Yuan dynasties, but the spirit took on its recognizable modern form during the Ming and Qing periods. Over time, regional practices solidified into distinct styles, each shaped by local climate, available grains, and fermentation traditions. By the 20th century, baijiu had become deeply embedded in social and ceremonial life across China.
.
Baijiu production relies on solid‑state fermentation, a method that uses a starter culture called qu. Qu is a mixture of grains inoculated with naturally occurring yeasts, molds, and bacteria. Producers add qu to steamed grains and allow fermentation to occur in pits, jars, or stone vessels depending on the regional style. After fermentation, the mash is distilled—often multiple times—and the resulting spirit is aged and blended. Aging vessels range from clay jars to stainless steel tanks, and blending is considered a core skill in shaping the final flavor.
.
The primary Chinese Baijiu offered at Oversea Distillery is produced by the Wangdao Distillery Co. located in the city of Ordos in North China's Inner Mongolia autonomous region and then bottled in Columbia. The spirit is crafted using a mash bill of sorghum, barley, and pea and then aged in pottery jars. Oversea also offers a barrel aged version of this baijiu - the Oversea 6 Years Aged Baijiu - which is aged for over 6 years in China, then finished for one additional year in our Oversea used whiskey barrels in Maryland. Of the two I preferred the fresh, clean, and floral character of the original Chinese Baijiu that also shows some melon and bitter herbs.

Most of us associate Rye Whiskey with North America but the spirit was first distilled in Europe -- particularly the lands that would become Germany and the Netherlands. (In fact, Emmanuel Downing is credited as the first to distill rye in America in 1648 by utilizing a German recipe.) Denmark borders this region and Stauning Whisky utilizes floor-malted Danish rye and barley when crafting their Stauning R.Y.E. Whisky. The spirit is double distilled in small direct-fired copper pot stills and matured for 3-4 years in new American white oak barrels. The result is an exceptional rye whisky, complex to the core, with a character of rye bread, dried fruit, bananas, vanilla, and even a little tea.

Who has created a Tiki inspired cocktail using rum from both Mississippi and Florida? I created a calorie saving version of the Pina Colada using Siesta Key Toasted Coconut Rum, Circle Hook Barrel Aged Rum and Trader Joes Pineapple Juice. The Siesta Key is made using molasses derived from Florida-grown sugar cane that is infused with toasted coconut. The Circle Hook Barrel Aged Rum is made by blending Louisiana sourced molasses-based and sugarcane syrup-based distillates aged for 1.5 years in new American oak barrels. Combine equal amounts and top with pineapple juice and fresh coconut.

We were recently gifted this Ksarak Arak and it provides an opportunity to discuss this historical, but modernly emerging spirit. Fits right into that category in the BevFluence TERROIR campaign.
.
Arak is a Levantine (regions and cultures along the eastern Mediterranean Sea) anise spirit traditionally distilled from fermented grapes and redistilled with aniseed, producing a clear, high‑proof liquor that turns milky white when mixed with water -- a visual effect caused by the precipitation of anethole, the essential oil in anise. Its history reaches back to the 8th century, when early Middle Eastern distillers refined techniques that made concentrated spirits possible. Over time, arak became embedded in the foodways of Lebanon, Syria, Palestine, and Jordan, where it is served with mezze and long communal meals.
.
Ksarak is the arak produced by Château Ksara, Lebanon’s oldest and largest winery, founded in 1857 in the Bekaa Valley by Jesuit priests. Although Ksara is best known for its wines, it also produces arak as part of its historic portfolio, drawing on more than a century of distillation tradition. The estate sits atop two kilometers of Roman-era cellars discovered in 1898, which today form part of its aging and storage network. Ksara’s modern operation farms roughly 400–440 hectares and produces about 3 million bottles annually, including Ksarak, its flagship arak. The producer’s arak is made according to Lebanon’s regulated standards—distilled from grape must and redistilled with anise

Summer is slowly receding so time for a few more refreshing Goslings Dark & Stormy cocktails. We like using the Appalachian Brewing Company's Ginger Beer along with the traditional Black Seal rum.
.
However, rum doesn't fade with the season. BevFluence will be highlighting the Rum category throughout 2026 and 2027 as a topic in the TERROIR campaign. Cheers.

Twenty-nine years ago as wine neophytes, we served a four-year-old St. Mary's Blanc at our wedding. It didn't occur to us that the shelf life of a dry Vidal Blanc is typically one-two years, particularly back in 1993 when winemaking in Virginia (and at Rockbridge) was still in an its infancy. We chose the wine because we liked it and more importantly, were able to get a steep discount on multiple cases. But hat's off to the winemaker at Rockbridge Vineyards for crafting a wine that retained its freshness and which we recall received numerous compliments.
.
I fear to open the one last bottle left over from that date, but was able to purchase the current vintage during our Shenandoah Valley - Appalachian Highlands Road Trip a couple weeks back. This version is still 100% Vidal Blanc, fresh, and loads of citrus acidity. Still a bargain at $18 and love the new label. This is a picnic wine to sip at Natural Bridge or throughout the Commonwealth. Cheers.

The Introvert Sauvignon Blanc made its mark at the USA Wine Ratings 2026, earning 88 points and a Silver Medal for its clean, crisp expression of Marlborough, New Zealand.

For Justin Koury, CEO and Founder of BevFluence and our USA Wine Ratings judge, what stood out was how naturally the wine expressed the classic New Zealand Sauvignon Blanc style, with the grassiness, herbaceousness and minerality he looks for in the category.

Produced by Navigator Wine Co., The Introvert 2025 brings subtle petrol and chalky aromas, crisp acidity, restrained fruit and a refreshing finish. It is a wine that does not need to be loud to make an impression.

Congratulations to Navigator Wine Co. on the well deserved recognition and 88-point Silver Medal at the USA Wine Ratings.
