Leftover chili cheese trio -> PIZZA in 90 seconds 🍕🔥

Was craving chili cheese dogs, then ground beef was on sale, then I passed the frozen fries on the way to checkout... so yeah, the Chili Cheese Trio happened.

The next day is where it got good.

Chop up the leftover chili dog, cheeseburger, and chili fries. Sauce a fresh pizza dough with half the leftover chili, load up the chopped leftovers, top it with mozzarella and cheddar and the rest of the chili.

Into the pizza oven at 800°F+ for like 90 seconds and you've got a pie the TMNT would be proud of. Cowabunga.

Shoutout to my bro @chefink204 for the chili cheese pizza inspiration.

Save this for the next time leftovers are staring at you in the fridge.
Send this to the person who says leftovers are boring.

Pollo Asado leftovers idea #354: Lasagnchiladas! 🔥

Shred or dice up the leftover chicken, throw it in a pot with an enchilada sauce of your choice (I used El Pato Red), simmer about 20 minutes, and then... Layers Assemble!!

Sauce, 2 king-size corn tortillas, chicken and sauce, cheese — repeat 3 or 4 times. The final layer gets a spread of fresh pico de gallo on top.

Into the Traeger (or oven) at 275°F for 45 minutes, then 325°F for 10 more to get that cheese nice and crispy brown. I let mine cool overnight so I could cut it and keep the layers intact — but 20 minutes is cool too 😅

Slice and enjoy. Easy family recipe, zero leftover chicken wasted.

What do you do with your leftover pollo? 👀

Had an idea to turn my @onlyfireoutdoor half-moon cooking grates into a homemade pollo asado press... so naturally, a few trips to the hardware store later, here we are! 🤣🔥

Spatchcocked a whole chicken, marinated it in a homemade achiote, citrus, garlic, and oregano blend, then fired up the Pit Boss kamado with mesquite lump charcoal and the @chefstemp S1/Breezo combo keeping temps honest.

Started indirect at 325°F, then finished over the hot coals for some nice char and grill marks before chopping it up for some loaded tostadas and tacos! 🌮🔥

First run wasn't perfect. The breast came out a little drier than I'd like, and the temperature control took some figuring out, but the homemade press worked like a champ!

A few tweaks next time and I think I'll have this thing dialed in. Half the fun of BBQ is experimenting, building shit, and seeing what works! 🤣🤘

🌶️ HOMEMADE ACHIOTE POLLO ASADO MARINADE

For one 4–5 lb whole chicken:

- ½ package (1.75 oz) El Yucateco Achiote Annatto Paste
- ½ cup orange juice
- ¼ cup fresh lime juice
- 4 cloves garlic, peeled
- 1 tsp dried Mexican oregano
- ½ tsp black pepper
- 2 tbsp olive oil
- ½ tsp salt (adjust to taste)

Toss everything into a blender and blend until smooth. Spatchcock the chicken, coat thoroughly with the marinade, and refrigerate in a sealed bag for 4–12 hours.

🔥 DIY ADJUSTABLE CHICKEN PRESS

Using my existing Onlyfire half-moon stainless steel cooking grates, I picked up:

- 4 × 1/4"-20 × 4" fully threaded stainless steel carriage bolts
- 8 × wide stainless steel fender washers
- 4 × 1/4"-20 stainless steel wing nuts

All stainless steel hardware suitable for cooking temperatures. No galvanized or zinc-plated hardware!

The washers bridge the grate bars while the wing nuts allow adjustable spacing and pressure to hold the chicken between the grates. Just snug enough to keep everything secure without crushing the bird.

Simple setup, completely adjustable, and easy to flip or move between direct and indirect heat.

Not bad for a little backyard engineering! 😎🔥

Also cooked up a grilled cheese with chicken, done in the Flatrock.

If you would have told me just a few years ago that I would be cooking for over 200 people overnight in a church parking lot I would have told you that you're crazy.

The people in this community have given me the tools, knowledge, and confidence to pull something like this off.

But the best part was watching my family show up, get involved, and help serve. That's something I'll remember forever!

We had an amazing time celebrating @cypress.church 75th anniversary! We made 16 cherry Dr Pepper pulled pork butts, 6 trays of @kendrick_bbq all meat rub with rosemary seasoned pit beans, 6 trays of elote corn, and 80 pounds of chicken. It was was all made possible by @traegergrills 🔥🔥🔥
