Our NEW Summer Farmer Salad

This is not your average salad, this has 30g of PROTEIN. The protein comes from our chickpea-tofu cutlet. You’ll also get vitamins A, C and K from the local greens and kale, beta-carotene from the locally grown carrots, and the cabbage and zucchini add fiber, crunch and hydration. This salad also has Sunflower Sprouts from @blackoakmicros

This is not just another salad, it’s a complete nourishing meal featuring the best of summer from local farms. Look for it on our new menu available 8/12.

This past April I was able to collaborate on Tender, a staged dining concept by artist Aaron T Stephan and hospitality expert Gabriela Acero. The goal was to draw on feelings of nostalgia through food and the different spaces they are enjoyed. From a solo snack at a bar while reading, late night food trucks, to loud family dinners.

I can’t begin to express how challenging but satisfying this dinner was and how grateful I am to have been a part of this collaboration. Thank you to my teammates, family, friends, sponsors and all who were able to attend. This was certainly something special.

Reclaiming summers in adulthood has been an interesting experience.

I grew up going to Florida every summer from school’s end to school’s beginning until I was 17. I did not truly experience what Maine had to offer during the warmer months until I was a young adult. It’s been a strange part of my existence that I struggle to convey with meaning to anyone - but I’m working on it!

Historically, it has not been my most celebrated time in my life. I get weird once it gets above 75 degrees. This year, things felt different. I said “it’s such a beautiful day” out loud 10 times a day when it was in fact, a beautiful day. I stayed out riding my bike as the sun would set. I would force myself to go on walks even when it was “too hot” just to expose myself to feeling the uncomfortable trapped feeling that surges over my body in deep humidity.

August specifically was balanced, enjoyed, and soaked up in every way. I feel inspired to go into the rest of the year with less tension, more progress, and an open mind. 💛
