Sometimes the best part of a distillery visit happens when you leave the distillery.

Our visit to NOM 1643 took us out into the agave fields just in time to catch an incredible sunset.

Beautiful views, great conversations, plenty of laughs, and some truly wonderful people to share it all with.

Building Tarsier in #NewYork.

Founder-led means we build everything ourselves: the bottle, the liquid, the labels, the distillery, even how we show up at a tradeshow.

Last week we brought our #SoutheastAsian inspired portfolio to @barconventbrooklyn Brooklyn, looking for the city that loves bold flavour as much as we do. We met @skurnikwines @blueprintspiritsnyc @fedwaycraft to show them spirits with a real point of difference: premium gins built on Southeast Asian flavour, made by founders with a story, and a conservation mission that gives every bottle meaning beyond what’s in the glass.

We came to NYC to find our Tarsier Tribe. Curious #drinkers, #bartenders and flavour #explorers who want discovery over status and warmth over elitism. Spirits that turn a familiar drink into a journey.

Watching Maestro Tabernero Don Arturo Campos, the mind behind La Venenosa Volcanes, explain his cooking process puts everything into perspective.

No timers. No formulas. He talks about heat like it’s a feeling, not a number. The earth pit is lined with volcanic rock, fired with oak, and cooked slow enough to let the agave do its job. Too much heat and you lose it. Too little and it never opens up.

This knowledge isn’t written down. It’s built batch by batch, year after year.

Cooking agave here isn’t about speed or efficiency. It’s about patience, restraint, and respect for the plant.
