I’m so happy and grateful for the opportunity to prepare and share our coffee at the @inconexus booth during the World of Coffee Europe in Brussels.

It was a pleasure to be part of such an inspiring event!

Thanks to @inconexus and @alfabetprague for making it possible! ☕️✨

This morning I brewed a washed Tabi from @alfabetprague , gifted at the World of Coffee by @boh.dan 👊🫶
-
It came out really nice — bright citrus notes that feel super fresh, with a soft brown sugar sweetness that ties everything together. It’s the kind of cup that just works really well with this unpredictable weather: light, comforting, and easy to enjoy.
-
Also a big shoutout to @comandantegrinder for giving my old bamboo C40 a new life. The upgrade with the Red Click is something I’d been eyeing for a while but never actually pulled the trigger on. Now that it’s here, having more clicks really opens things up — more control, more options, and ultimately better brews.
-
And if you’re wondering about the shirt — it’s a collab between @herznycoffee and @printa_budapest . Pretty sure there are still a few pieces left on their webshop if anyone’s interested…

World of Coffee Brussels 2026 ☕️

It was my first time attending World of Coffee and watching the World Coffee Championships, and it was definitely one of the most unique experiences I’ve ever had. Seeing the latest coffee technologies, meeting suppliers, producers, farmers, and coffee lovers from all around the world in one place was incredibly inspiring✨♥️

Čím čerstvější tím lepší? 🤔☕️

…
The fresher, the better? 🤔☕️

Our Honza already has some roasting experience. Coffee is his daily bread. Roasting with the new Loring S15 Falcon roaster brings a lot of new sensory experiences for our barista palates and cleaner flavor profiles for our customers.✨

Working with coffee itself, no matter how you prepare it, comes with one clear rule. Let the coffee rest after roasting! 🫂❤️‍🩹

Today, Honza is participating in the Czech Coffee Roasting Championship as part of this year’s @gastro_sweet_fest, so we’re keeping our fingers crossed for him while sipping great coffee at EMA.

Born in Czechoslovakia, this city feels like home every time I return. This trip wasn’t about the beer—it was about reconnecting with coffee legends from my past and meeting the heroes of my future.
We dove deep into the @specialtycoffeeassociation new Coffee Value Assessment system with some of the most dedicated coffee people I’ve ever met. These Czech coffee addicts dragged themselves out of bed at 4 AM to cup Gesha Village and Panama La Mula in @um_narodni basement. That’s not just passion—that’s beautiful madness.
The Czech coffee scene doesn’t just punch above its weight—it bench-presses excellence. Prague delivered beyond my wildest expectations, and I’m already scheming my return.
Massive thanks to @dominik.o.novak for orchestrating this beautiful chaos, to all the incredible participants—absolute legends who made me feel so welcome in Prague that I’m already checking out plane tickets to get back. @boh.dan , @kocianova.hanka , @miipopelkova , @katerina_stoksova , @fathers_coffee_roastery , @cafehrnek , @beberrycoffee And to my daughter Noemi for capturing it all (and showing us how Czech cuisine is really done 🥟).

Společně mají + - napraženo neuvěřitelných 60 tun kávy. Wow. Dobrá práce. 🫱🏻‍🫲🏼
S pražením jsme začali před necelými 8 lety a tak už jsme trochu skillu nabrali. Nyní se pouštíme do nové pražící éry společně s novou pražičkou. Alespoň už to není tak velké neznámé. Zábava to ale bude! O tom si popovídáme zase příště… Zatím, roštuj!

We say goodbye to our partner and tireless worker. Everybody knew him, he loved consistency and order. The baristas would fight for shifts in his presence to quietly admire his skill...

We don’t mean Honzik! But our Diedrich IR12! 🤟🏻
Together they have + - roasted an incredible 60 tons of coffee. Wow. Well done. 🫱🏻‍🫲🏼
We started roasting less than 8 years ago, so we’ve picked up a bit of skill. Now we’re embarking on a new roasting era with a new roaster. At least it’s not such a big unknown anymore. But it will be fun! We’ll talk about that next time… for now, roast!
