I had an amazing time at Brands Hatch what an unforgettable track day! The energy, the atmosphere, and the thrill of being out on track made the whole experience something truly special. I’m beyond grateful for everyone who’s been supporting me throughout this journey; your encouragement means the world and keeps me pushing forward every step of the way. Living with Type 1 diabetes hasn’t held me back – if anything, it’s shown me that nothing has to stop me from chasing my goals and doing what you love. With determination and the right mindset, anything is possible, and it feels incredible to prove that every time I get out there.

Soooo last round was a rough ride but a ride nonetheless. It was quite enjoyable for the most part with some frustrating and sometimes painful moments. Came home with a P3 so was quite happy with that. Such a shame with inconsistent karts and driving standards that the mid season was a struggle but overall happy with what I managed through the season. Come home with a P5 in the championship which was probably all I could recover from the heavy fall mid season. Looking forward to going again in the Winter. 🌿SUPPER CLUB MENU🌿

New season and a new menu showcasing everything fresh and shaking off the winter with a distinctive Italian feel!

Kicking off with Friday 7th April ‘Good Friday’

We begin straight away with snacks and this month starting with a Tuscan style whipped chicken liver parfait to be spread on our house charred bread and pickles.

Then a beautiful and tasty minestrone but done right with perfect spring vegetables cooked quickly to seal in all their goodness and flavour, finished with foraged wild garlic and our own in house made rigatoni pasta, covered with the best aged parmesan and a healthy drizzle of green, peppery Skepti olive oil.

Our fish course is simple but full in flavour, we pick the best fish available that day from Rye harbour, which we brine to keep moist then simply sauté then serve with a crab bisque sauce made from roasted whole crabs and fish then cooked down to a intense umami sauce with a spoon of roasted aioli.

To follow and to celebrate the change of the season Lamb is coming into its best,
Whole spring lamb wrapped in a little pancetta and spring greens roasted over wood embers, served with the height of the season spikey artichokes, trimmed, poached then grilled also over the flames with the most delicious Romana courgettes cooked down to a perfect puree.
Alongside one of our favourites hand rolled ricotta gnudi, fresh organic ricotta cheese, drained then set with semolina flour, rolled and poached turning into perfect little bursts of cheese pasta with a touch of lemon and mint.

Dessert is a classic and not to be missed, ‘Torta Meringa Limone’ Italian lemon meringue cake, layers of lemon curd, crème patisserie one on top of another then covered with whipped Italian meringue and torched and perfect with a little glass of something sweet.

🔥 SUPPER CLUB 🔥

New year new menu and something for the dark nights, this menu celebrates everything fire!

With that in mind we open with a snack of a traditional semi cured smoked sausage made with venison form the estate, cured then hot smoked for 4/5 hours then sliced and served with a little mustard and pickles.
Starters consist of our in house made cheese using Park farm in Brastead Jersey heard milk, with slow cooked hispi cabbage cooked over the embers until confit, stuffed then topped with deliciously crispy sourdough crumb cooked in a little beef fat rendered from the main course.

Our fish is always changing working with a day boat working out of Rye harbour only using the best they have when the call comes in the day before. Served with mussels cooked in a smoked butter sauce made from the mussels and their cooking liquor, cut with a little acid and parsley oil.

To follow Chart butchery based next door and who we work with extremely close taking advise and swapping ideas source some amazing beef. Using a Hereford Charolaise cross, grass fed then aged on site, really is some of the best beef I’ve used over the years, we seal and cook the rib of beef over oak building up layers of deep Smokey flavour while rendering down. Served with a highlight of January Calçot onions cooked directly in the coals until tender then peeled for their delicious, sweet centre. Alongside with a little nduja bearnaise to tie together.
Served with a classic pomme gratin side we used to do at the walnut tree, creamy herbed potatoes topped with aged gruyere cheese and gratinated.

To finish burnt Basque cheesecake we cook inside our wood oven, dark & cracked sugary top with creamy soft interior. Cooking it this way adds a slight smokiness and the oven can get very hot, which caramelises the cheesecake perfectly. Served with the first of the seasons forced rhubarb which we grow ourselves.

Reservations are now open and our first evening back is Friday the 20th Jan and being January and our opening night for 2023 they’ll be a little drink on us on arrival!
