APPLE CIDER DONUTS… BUT MAKE IT CAKE. 🍎🍁

I fear this might be one of the best things I’ve baked this fall. She’s soft, buttery, packed with apple cider flavor, and absolutely COVERED in cinnamon maple sugar.

Basically, imagine your favorite apple cider donut from the pumpkin patch, but in snack cake form. No frying, no refined sugar, and your entire kitchen is going to smell like fall. YOU’RE WELCOME.

* 2 eggs
* ¾ cup apple cider @mayerbros
* ½ cup unsweetened applesauce @treetopinc

Cinnamon Maple Topping:

* 3 tbsp melted butter
* ¼ cup maple sugar or coconut sugar

INSTRUCTIONS:

1. Preheat oven to 350°F. Grease or parchment line an 8×8 or 9×9 baking pan or loaf pan.
2. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt together.
3. In another bowl, whisk melted butter and maple sugar. Add eggs, apple cider, applesauce, vanilla, and vinegar. Mix until combined.
4. Fold wet ingredients into dry ingredients until JUST combined. Don’t overmix!
5. Pour into your prepared pan, or loaf pan/pans and bake for 28–35 minutes, or until the center springs back and a toothpick comes out with a few moist crumbs.
6. While the cake is still warm, brush the entire top with melted butter.
7. Mix maple sugar, cinnamon, and salt. Generously sprinkle over the buttery cake.

Slice yourself a big ol’ square, make a cozy coffee, and ENJOY.

SAVE THIS for your next fall baking day and SEND IT to your apple cider donut obsessed bestie. 🍎🤎
