These Mongolian Ground Beef Noodles are truly worth the hype! The ramen noodles soaked up all that delicious sauce, honestly I don’t think I’ll ever go back to using lo mein noodles 🥹

I made a few changes to the recipe but the original recipe was by @britscookin . Thank you so much for the inspiration! 💖💖

✨ Full recipe is posted on my website as usual ✨

An easy, high-protein meal you can make for a party, take to a tailgate or prep for lunch all week! 🙌

This Chicken Caesar Pasta Salad is packed with protein, produce and so much flavor, and it’s incredibly easy to customize.

Ingredients:

• 1.8 lbs chicken breast
• ¾ bag Rummo Protein Pasta
• 1 container cherry tomatoes, halved
• 1 cucumber, chopped
• ½ bottle Hanley’s Caesar Dressing
• 1 tablespoon Brit’s Cookin’ Garlic & Herb Seasoning

Directions:

1. Cook the pasta according to the package directions, drain and allow it to cool slightly.
2. Season the chicken with Brit’s Cookin’ Garlic & Herb Seasoning, then grill or sauté until fully cooked. Let it rest before chopping.
3. Add the pasta, chicken, cucumber and tomatoes to a large bowl.
4. Pour in the Caesar dressing, toss everything together and enjoy warm or cold!

I love getting my ingredients from Oak Point St. George because they have so many different pastas, dressings and seasonings. You can mix and match them to turn one basic recipe into something completely different!

Brit’s Cookin’ seasoning brings so much flavor and even has a little kick, which I love, and Hanley’s is a local favorite. 💚

Try one of these variations:

🥕 Honey mustard: Carrots, broccoli and honey mustard dressing
💜💛 LSU tailgate: Add chopped beets and yellow bell pepper
🥢 Asian-inspired: Carrots, peppers and an Asian-style dressing
🫒 Greek-inspired: Cucumber, tomatoes, red onion, olives, feta and Greek dressing

You can also swap the chicken for shrimp, steak, rotisserie chicken or chickpeas. The possibilities are truly endless!

Save this for your next meal-prep day or tailgate, and let me know which version you’d make! 🏈

Apparently this weekend’s kitchen theme was “we have range.” 😂

First up — homemade chicken pho! And when I say homemade, I mean I was WAY outside my normal cooking lane on this one. Big shoutout to @madelinemehria for the recipe. I watched her video more times than I care to admit, pausing along the way so I could actually write everything down.

We used a rotisserie chicken, roasted the bones along with shallots and ginger, and made that gorgeous broth from scratch. And y’all… YUMMY. 🍜

For once, I actually followed the recipe. No freelancing. No “this looks about right.” No Cajun measuring system. I knew I was out of my element, stayed in my lane, and it turned out AMAZING.

Then tonight we came right back home with Dirty Red Beans and cornbread. Big thanks to @britscookin for this recipe!

Now THIS is where I was comfortable enough to return to my regularly scheduled programming: recipes are suggestions. 😂 I added andouille sausage, doubled the recipe because leftovers are the whole point, and of course used Blue Runner red beans. You just can’t beat them.

And that cornbread? My Gran’s old-school #10 cast iron skillet and two boxes of Jiffy. Nothing fancy. Nothing needs fixing. That skillet has probably made more pans of cornbread than I could ever count, and it’s still my favorite.

So we went from roasted chicken bones, shallots and ginger for homemade pho to Blue Runner, andouille and Jiffy cornbread.

International cuisine one day. South Louisiana comfort food the next. I contain multitudes. 😂

Lunchtime confessions of a midlife teacher and that damn Monday is back. Already. Every single week. Like clockwork. We’re just gonna roll with it.
BUT surprise, I cooked!
Creamy chicken noodle soup and it is so good. I got the recipe from @britscookin, go check her out because she did not disappoint. This one is going into the regular rotation.
On the teaching front, Iput together a little book for one of my students today hoping to encourage them to read along with us. Printed quarter sheets instead of a full book first because listen, trial and error is real and I’m not wasting all the ink and paper if the interest isn’t there. We’ll see. Fingers crossed.
And finally, a public service announcement. Do NOT go to Walmart on a Sunday. Between the regular shoppers AND the associates pushing those carts grabbing online orders you are literally dodging carts the entire time. Also I try to stay out of Walmart in general because I cannot be trusted in there and my bank account knows it.
See y’all tomorrow. Maybe.#lunchtime🍴 #spedteacher #teacherlunch #teachertalk #teachershare

Welcome to my cozy kitchen series! 🍂
EP. 1: Kitchen Sink Chicken Noodle Soup 🥣✨

I’m no chef, but I do love a cozy meal. This fall + winter, I’m sharing easy, cozy recipes that anyone can make starting with this twist on a classic. 🤎

The best part? ONE POT = easy cleanup. 👏🏼 And because I’m not a chef, I measure with my heart + taste buds.

INGREDIENTS
½ pkg bacon • 3–4 chicken breasts (~1 lb) • 1 large yellow onion • carrots • celery • garlic • 8 cups chicken stock • heavy cream • Parmesan • noodles • 1 tbsp flour • 2 tbsp butter • olive oil

OPTIONAL: lemon juice + zest • kale or spinach

SEASONINGS: salt • pepper • thyme • rosemary • 2 bay leaves • sage • Cajun seasoning

HOW TO MAKE IT 🥣

1. Cook bacon until crispy. Remove and set aside, leaving a little bacon grease in the pot.
2. Season chicken with salt, pepper + Cajun seasoning. Add olive oil and cook until done. Remove, cover + rest.
3. Melt butter and sauté onion, carrots + celery until soft. Add garlic and cook 1 min.
4. Stir in flour, then seasonings + bay leaves.
5. Add chicken stock, bring to a simmer, cover + cook 15–30 min. Taste + adjust seasoning.
6. Add noodles and cook according to package directions. Add kale/spinach + lemon if using.
7. Shred chicken and return to the pot with crumbled bacon. Stir in a splash of heavy cream + plenty of Parmesan.
8. Serve + enjoy! 🍂✨

P.s. remember to always measure with your heart. 🤎
