Stop boiling your Brussels sprouts.

Cook them in bacon fat instead!

The trick starts with the bacon: add a little water to the pan first. It helps render the fat before the bacon starts browning, giving you crispy pieces and plenty of flavor left behind for the sprouts.

Bacon Brussels Sprouts | Serves 8

• 4 lb slab bacon, cut into 1-inch cubes
• 2 lb Brussels sprouts, trimmed + halved
• 1 tbsp unsalted butter
• Salt + black pepper
• Juice of ½ lemon

Add bacon and ¼ cup water to a heavy-bottom pan. Bring to a boil, then cook over medium-high until the water evaporates and the bacon is deeply browned. Remove the bacon, leaving about 3 tbsp rendered fat behind.

Add Brussels sprouts and ⅓ cup water. Cook 15–20 minutes, tossing regularly, until browned and tender.

Finish with butter, crispy bacon, salt, pepper and fresh lemon juice.

Rich, smoky, crispy—and just enough acid at the end to balance everything out.

Easy game day ribs at home 🔥🍖

No complicated method needed.

I cooked these on my @bstrd.usa kamado grill over lump charcoal, running the grill at 275°F for that low-and-slow cook.

Simple method:
• Season the ribs generously with your favorite BBQ rub
• Set up the kamado for indirect cooking at 275°F
• Cook for approximately 4 hours, until the ribs are tender and have the bark you want
• Brush with your favorite BBQ sauce toward the very end of the cook
• Let the sauce tack up into that sticky, glossy finish
• Slice and serve for game day

That’s it. Good ribs don’t have to be complicated.
