When it comes to fine Chardonnay, Burgundy is the ultimate playground—& no two sub-regions highlight the spectrum of terroir better than the flinty slopes of Chablis & the sun-drenched limestone of the Côte de Beaune.

Two master winemakers head-to-head with two exceptional back-vintages: Patrick Piuze Chablis Grand Cru “Bougros” 2020 & Domaine Marc Colin Saint-Aubin 1er Cru “En Remilly” 2021.

The North Star: Pure Kimmeridgian Energy
Bougros sits at the western edge of the Grand Cru hill, featuring steep slopes rich in Kimmeridgian limestone and clay.
It explodes with oyster shell, crushed chalk, & green apple. Powerful, laser-sharp, & driven by a salty, mouth-watering mineral finish that goes on for a minute.

The Southern Pinnacle: High-Altitude Finesse
“En Remilly” is arguably Saint-Aubin’s most famous 1er Cru, sitting right around the corner from Puligny-Montrachet and Le Montrachet itself.
It opens with white peach, toasted hazelnut, & that signature Matchstick/flinty reduction. It’s silky yet taut, showcasing razor-sharp drive & elegant floral lift.

Franck.

Text on both slides:

After driving all the way from Oslo to Chablis, we stopped by the fantastic wine bar Wine Not, where Enguerrand gave us a very warm welcome.

Along the way, we had already picked out the wine we wanted to drink: Raveneau Butteaux 1986.
The 1986 vintage is not a normal Raveneau vintage. A small part of the 1986 production became sort an experiment. I find the story itself incredibly interesting:

At Raveneau, they had plenty of wine that year, which gave them the chance to experiment with a small part of their Butteaux cuvée. They took three barrels of Butteaux and aged them in new oak. As most people probably know, Raveneau is a producer that does not normally use new oak and is very focused on showing the character of Chablis and its terroir.

When they tasted the wine around the normal release, they thought it was far too oaky and decided not to sell it. Instead, they kept the bottles in the cellar. They tasted the wine again after 5, 10 and 15 years, and still felt the same way. After 20 years, the oak had become better integrated, but now the sulfur stood out. At the time, Raveneau used more sulfur in their wines than they do today. After around 30 years, the wine had developed enough for the family to consider releasing some bottles.

Ravenau could easily have sold these bottles year earlier, but instead chose to keep them in their cellar until they believed the wine was finally ready to drink. It is a decision I have a lot of respect for.

Wine Not Chablis, located only a short walk from Raveneau’s winery, received bottles of this cuvée directly from Raveneau. The colour and fill level of our bottle were better than we could have hoped for!

I can sometimes be critical of giving a wine 100 points, or even of judging wine on a 100-point scale at all. But I have to say that this particular bottle, which we were lucky enough to drink in perfect condition, came very close to what I would call a 100-point wine.

Weight, structure, aroma, complexity, intensity, balance and length. It all just works in a way that is hard to describe. It is difficult to think of something the wine was missing, except maybe a bigger bottle, because I could ha
