Chacónne Honey Toast testing in progress! My girl @ruthtapley insisted we try this @aromebakerylondon when we were there a few summers ago and I never forgot it. They are a stellar bakery and we’re happy to learn from their winning ways and figure out how to make it our own. We have so much shokupan at the bakery in Scottsdale happening already for wholesale customer needs and Arizona is also rich in honey, so let’s party🐝!

@chefjrdn staged with us yesterday and we decided to use some of that time and his valuable skill set to try two very different recipes for the honey-butter mixture, one leaning more on butter and the other more on brown sugar and honey. Nothing at all undelicious in leaning on either of those. I’ll be tinkering with ratios a bit to get the best of both worlds🤗🍞🧈🍯. Might add a little Meade to the mix for a higher hydration and flavoring of the middle crumb even as the exterior stays crispy and caramelized. Yum!

We’re making some crème fraîche and will play with steeping some elderflower (chef @moorfoodplz ‘s suggestion) in some cream and then whip those together with a little dab of honey caramel sauce for a lovely quenelle to order, maybe with a little dehydrated honeycomb grated on top with a little Maldon salt…forever chasing this dragon! Looks like @jrcholico will chase it with me 💪🏽🤌🏼
