Linked up with bro & brought him a little closer to my roots. 🇬🇹🌊
I told bro about a dish I grew up eating as a kid called hudutu and how I used to help my mom put it together. I remember mashing the green and yellow bananas, watching her fight with the crabs, peel the shrimp, fry the red snapper, and put together that coconut broth with okra and everything else that makes this Garifuna dish what it is.
And one of the most special parts of this experience was bringing out a piece of my childhood — the mortar straight from Guatemala.
This mortar is as old as me. I remember using it as a kid to mash the bananas for my mom. It’s been sitting for years, and honestly, it didn’t look the way I remembered it. Cracks, wear, age — all over it. But it still had some life left in it.
So I brought it out of retirement and put it back to work with bro. 😂
What’s crazy is hudutu is traditionally connected to the ocean and coastal life, and here we were bro & I cooking it right by the river. That little detail made the whole experience feel even more familiar, almost like I was back home for a moment.
I got to bring bro into a piece of my roots while he brought me into his craft. I got to see the behind-the-scenes of how he operates, his techniques, and the work that goes into executing a dish.
Chef Nicc — you nailed it bro. The hudutu was FIRE. 🔥
Thank you bro for taking the time to make this, for allowing me into your process, and for helping bring me back to a piece of my childhood and my Garifuna culture.
The food brought us together to grub, but the roots made the experience.
I appreciate you bro. - Zerv | #explore #garifuna #hudutu #guatemala #chef

Sitting down with bro, I wanted to ask him something deeper than “How did you get into cooking?”
I asked:
When did cooking become more than something you did and start becoming who you were?
At just 18 years old, he made the decision to devote himself to cooking and really began to understand what it meant to commit himself to something.
Hearing him speak about that experience gave me a different perspective.
Because when I think about who I was at 18, my mindset was nowhere near where his was.
That level of self-awareness and maturity at that age is something I can appreciate now in a way I probably couldn’t have back then.
This conversation wasn’t just about cooking.
It was about identity, devotion, purpose, and the moment something you love starts becoming a part of who you are.
Here’s a look into Chef Nicc’s experience.
Sometimes the real question isn’t “What do you do?”
It’s:
“When did what you do become a part of who you are?” 🎙️| #explore #nyc #chef #chefsofinstagram #scenery
