Sweet Potato "sashimi"

I love sweet potatoes for so many reasons. They're healthy, beautiful and delish!! There are tons of varieties to choose from, and they're so versatile! Give them a try!

Whole sweet potatoes were poached in dashi, marinated in rice vinegar, ponzu, sesame oil, and ginger, then chilled. Then, cut into cylinders and rolled in sesame seeds. Served with homemade cilantro and seaweed pearls and black garlic vinaigrette. Garnished with herbs and edible flowers from my garden! It's Pretty N Delish!
