Serious American steak meets Indian gravy (and all sorts of big sides)? Ok, that's a long way of saying that @chefsujans has opened @eldernyc a delightfully personal, distinctive version of the chop house. His Bone-in Rib Chop is dry aged for 32 days, concentratng the beef's flavor, adding nuttier notes. He serves it with a rich bone marrow nihari gravy, deeply spiced (but not spicy; nihari is the base of a traditional savory meat stew). Bites - funky ribeye, warm spices, collagen & buttery marrow - are a different meat experience.

That's the point of the place: great steak, lots of Indian flavors & preps - but it's neither a steakhouse nor an Indian restaurant (nor, of course, a dreaded "fusion"). Inspired by the classic chop houses of London (where Chef Sujan cooked for 11 years), the meat is here, but it's part of a big, broad menu.

So, we feast, across all sorts of dishes:
- Quail Scotch Egg with Mustard Aioli & Pickled Shallot
- Oysters with Gooseberry & Fermented Chili Mignonette
- Brioche Rolls with Bone Marrow & Snail Butter
- Grilled Shrimp Goa style, with Balchão Butter & Pickled Fennel
- Tandoori Chicken Roulade
- Duck Seekh Kebab with Stone Fruit Compote
- Tomato & Plum Salad with Rassam Sorbet & Basil Oil
- Thirty Layers Potato with Potted Crab & Celery
- Pulao Rice with Caramelized Onion

Chef Sujan has a broad perspective on food: he grew as a chef across several continents. I met him almost 10 years ago, when he was still new to NYC. Now he has a growing empire (Indienne, in Chicago, has a Michelin star; he has other places across the country). I like Elder a lot, because it captures his distinctive point of view. Designed by @mapamuellerdesign, it feels like a London club, with dark green walls, velvet seats, walnut panels, plus Indian textiles. You settle in and let courses arrive. The drinks program is powerful (led by @lohangingfruit & @equal_parts). Small plates come first, mostly Indian flavors... you build to the steak and the progression makes sense. Don't miss the desserts (he was a pastry chef first; they're great).

An evening of incredible food, vibrant culture, and Bollywood masti at Flavors of Bollywood, part of @nycwff , with The Culture Tree @theculturetree , founded by Anu Sehgal, as the main event partner!

Hosted by the fabulous Chef Maneet Chauhan @maneetchauhan and Chef Vijay Kumar @chef.vijayakumar , the evening brought together some of the finest Indian chefs, incredible culinary creations, and the magic of Indian cuisine!

Day 52/100 — Guilt free Soya Smash Burger 🌱🍔

Ingredients:
Soyabean, 1 boiled potato, 1 carrot (grated), cheese slice, burger bun, tomato, onion, ketchup, mayonnaise, butter, lemon, chaat masala, black salt, Magic Masala & Peri Peri masala.

Making:
Soak soyabean in hot water for 10 mins → blend → mix with potato, carrot, spices & lemon → shape into tikkis → roast in butter. Toast the bun, add ketchup → tikki → cheese → tomato & onion → top bun. Serve with ketchup & mayo. Yeayy! 🍔🌱

Our latest Eat For Good dinner was an incredible collaboration between @chefarundishoom and the team at @dishoom and @chefsujans and the team at @eldernyc. The night brought people together around the table for a family-style feast filled with rich Indian spices with an even greater purpose

Together, we raised enough to provide 240,000 meals for our neighbors across NYC!

With cuts to food assistance making it harder for many New Yorkers to put food on the table, every bit of support counts. Nights like these show how a shared love of food can bring people together and make a real difference.
