Filmed this late at night during a very busy week so the edit is a bit rough around the edges but well it turned out far too good not to share lol 🍖

Ingredients:

Lamb pieces with bones inside and a bit of fat
Large potato cubes
5 or 6 whole garlic cloves
1 tsp ginger paste
Bay leaves cinnamon stick cardamom pods and cloves
Saffron water
2 or 3 large mild green chiles
Diced white onions
Tomato paste, tomato ketchup, Laham Spice, Paprika, Salt, Olive oil, Ghee
Fresh coriander (optional)

Prep:

1. Place the lamb into the pressure cooker with the whole garlic cloves, one teaspoon of ginger paste, bay leaves, cinnamon, cardamom and cloves

2. Pour in a splash of saffron-infused water, cover the ingredients with water, add a pinch of salt and allow it to cook for 3 whistles until the meat is perfectly tender (or select the pressure cook function on high for 9 mins)

3. Release the steam carefully then add the potato and the whole green chillies into the cooker

4. Seal the lid once more for 2 whistles ensuring the potatoes become buttery soft while keeping their shape (or pressure cook on high for an additional 4 mins) for a total of 5 whistles altogether

5. In a separate pot gently sauté the onions in olive oil and a little ghee until they are sweet and translucent

6. Stir in the tomato paste followed by a splash of Heinz tomato ketchup along with the laham spice and a touch of mixed spices (predominantly paprika powder) to build that vibrant rich base

7. Transfer the lamb, potatoes and the broth into the pot with the tomato paste and ketchup base

8. Allow everything to simmer together for 9-14 mins until the sauce thickens and takes on a deep red glow

9. Turn off the heat and gently stir in one teaspoon of fresh ghee to lock in that rich aroma and give the sauce a glossy finish

10. Garnish the dish with fresh coriander and serve hot alongside your favourite warm bread ready for the table (P.S: I did not happen to have fresh coriander at home when filming this but it makes a lovely addition if you have it on hand)

عيد مبارك ✨

Eid mornings begin with something sweet: a beautiful spread of traditional desserts to set the tone for the day. While the meat feasts await later, there’s something timeless about the quiet elegance of an Eid breakfast ✨🌙

As we share our blessings, let’s remember the people of Palestine in our Duas. Their resilience is a reminder of our collective responsibility. May we continue to raise our voices, extend our hands through donations, and keep them close in our hearts not just today, but always 🖤🇵🇸
