VEGAN CARROT BANANA APPLESAUCE BREAD! (Recipe and directions below ↴)
🥕🍌🍎🍞
•
Hi friends. How’s everyone doing? We are over here with Murphy and Susan, holding down the fort, trying to keep busy and stay buoyant, but man things seem to be getting really...REAL, if you know what I mean. 😩
.
Anyway, I’ve taken to food prepping, baking and cooking as my outlet so today I adapted this recipe from @thesimpleveganista and put my own personal spin on it. If you feel like making it, take a photo and add the hashtag #bakedbychristine! I would love to see how yours turn out. Stay safe and healthy out there friends. Lots of love. xoxo
——————————————
Here’s how to make it!🤗
•
INGREDIENTS: 🗒
* 2 cups chickpea flour
* 2 teaspoons cinnamon
* 1/3 cup unsweetened applesauce * 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* Generous pinch of salt
* 1/2 cup coconut milk
* 1/4 cup warmed coconut oil * 3 medium bananas
* 3 carrots
•
GLAZE:
I eyeballed this, but I melted together a couple small scoops of coconut butter, a small spoonful of Sunbutter, lots of cinnamon and some maple syrup to taste. Drizzled it over the top to add some sweetness. •
DIRECTIONS:
Preheat oven to 350 degrees F.
I steamed my carrots in my Instant Pot because I didn’t want the texture but you can grate them if you’d like. Mash your bananas (mine were frozen so I heated them quickly before mixing them up.)
•
In a medium mixing bowl, add the flour, baking powder, baking soda, cinnamon and salt, mix to combine. In a 2 cup measuring cup, combine the milk, oil and apple sauce, mix to combine.
•
Add the oil/sugar mixture and bananas to the dry ingredients, mix well, but don’t over mix. Lastly, fold in carrots. I made sure mine were puréed but it doesn’t matter if they are grated, just mix in like you would normally.
•
I poured the batter into a loaf pan, and baked it for a little over an hour, until golden brown and the fork came out clean after testing the center.
•
Let it cool for about ten minutes, then drizzle the warm sauce on top - et voilá! 😋
