September was a roller coaster of emotional chaos and stress. Wouldn’t have it any other way. 10/10 recommend. 😅😂

Sourdough Cinnamon Rolls (save recipe below ⬇️) makes 12

A nutritionist posting cinnamon rolls 😱 I believe in knowing what you’re eating and enjoying it on purpose.

Why sourdough? The long, slow ferment does some of the work before the dough ever hits the oven. Wild yeast and bacteria break down part of the starches, and a lot of people find it sits easier than a quick rise roll.

Dough: 188g active starter, 375g warm whole milk, 2 eggs, 75g sugar, 13g honey, 650g bread flour, 100g AP flour, 10g salt, 90g softened butter

Filling: 113g softened butter, 220g brown sugar, 2–3 tbsp cinnamon

Frosting: 8 oz cream cheese, ½ cup butter, 3 cups powdered sugar, 2 tsp vanilla bean paste, 2–3 tbsp heavy cream, pinch of salt

1. Mix everything but the butter. Knead, then work the butter in until smooth.
2. Let it rise until puffy. Roll out, fill, roll up, cut 12.
3. Place in a buttered pan dusted with cinnamon sugar. Refrigerate overnight (optional). I used @caraway_home
4. Let rise until puffy. Bake at 350°F for 25–30 min.
5. Beat the frosting until smooth and spread it on warm.

Save this for the weekend!

Another week! Coming into the last 12 weeks of the year! What you grateful for each week?

I had multiple friends birthdays, friends visiting from Ireland. Great food. Great time with Dougal. Clients crushing workouts and getting stronger. Got to two events and even got a run in! LFG 🚀

This is how a wedding weekend in Sicily begins.

Sea breeze, salty skin, your favourite people, endless laughter, love, and a dance floor nobody wanted to leave.

Ben & Lindsay’s welcome party was more than the night before.
It was the beginning of the story.

Come to Sicily. Bring everyone you love.
Make a weekend of it!
