The evenings are getting shorter, and every little bit of golden light feels worth holding onto a while longer. So I bottled some of it. Grapefruit takes centre stage here, in three forms: Giffard’s crème de pamplemousse, fresh juice, and a homemade oleo saccharum for those deep, oily citrus notes. Gin and fino sherry keep it dry and bright, rosemary adds a woody edge, and cold-brewed oolong brings a soft, toasty finish. Milk washed until crystal clear. Bittersweet, silky, a last glimpse of sunshine before winter. Cheers! And for the track, « Watchful Eye » by Ivory & Sahar, just released on Metrica. Italian producer Ivory has been on a roll this year, from his remix for Innervisions to collaborations with some of the scene’s most exciting names, and this link-up with Sahar is one of his finest moments yet. Deep, hypnotic and slowly unfolding, the kind of groove that pulls you in without you noticing. Enjoy! 🍸 LAST LIGHT OF THE SUN (for 3 cocktails) 75ml crème de pamplemousse @giffard_liqueurs_syrups 45ml gin 30ml fino sherry 45ml fresh grapefruit juice 20ml fresh lemon juice 25ml grapefruit oleo saccharum* 15ml rosemary syrup @bacanha_ 60ml cold-brewed oolong tea 90ml whole milk Ice by @thenicecompanyparis Combine all punch base ingredients in a pitcher. Pour the milk into a separate glass bowl. Slowly pour the punch base into the milk. It will curdle instantly. Cover and refrigerate overnight. The next day, filter through a coffee-filter-lined strainer into a clean bottle. Return the first cloudy pours over the curds and let it drip fully. Seal and refrigerate. Serve 3.5 oz (105 ml) over a large ice block. Garnish with a rosemary sprig. Enjoy. *grapefruit oleo saccharum: Peel 2 grapefruits (avoiding the white pith). Cover the peels with 60g of white sugar, massage well, and let sit at room temperature for 3 hours. Add a splash of water to dissolve any remaining sugar. October is here, and with it the last ripe plums of the season. Before they disappear from the market stalls completely, I wanted to give them one proper send-off. Muddled fresh plum with Bas-Armagnac, lemon, a touch of sage syrup and Angostura. Juicy and bright at first, then deep, woody and a little herbal as the armagnac takes over. Some recipes stick around for a reason. At Teardrop Lounge in Portland, this whiskey sour has been on the menu since 2010, and after one sip, it’s easy to see why. Irish whiskey and dry vermouth set the base, lemon brings the brightness, while peach liqueur, Bénédictine and a touch of honey add a soft, golden warmth. Shaken with egg white for that silky foam, then finished with a few drops of orange oil. Delicate, round, perfect as the evenings start to cool down. Cheers! So with autumn now officially here, I wanted to hold onto that feeling a little longer. It features the combination of peated Scotch and raspberry—a really interesting pairing! A smoky and fruity way to start the fall. Cheers guys! Summer’s slipping away, and I’m not quite ready to let it go. Still deep in my carrot juice experiments, and this pairing was the one I kept coming back to. Apricot and carrot turn out to be natural partners — both have that soft, sunlit sweetness, one fruity and floral, the other earthy and round. Add cognac for depth, ginger for a bit of bite, then milk washed until it’s silky and clear. Warm, golden, and just autumnal enough to ease the transition. Cheers! Not a huge cucumber fan, if I’m honest. But this recipe intrigued me enough to give it a shot anyway. It comes from Miguel Munoz, bar director at Art DC in Washington, who built it around what you could actually grow on a windowsill, treating humble garden herbs with real respect instead of leaving them as an afterthought garnish. Gin, fresh cucumber juice, thyme syrup, lime, a few cracks of black pepper, lengthened with soda. Green, herbaceous, almost savoury, and honestly, it converted me a little. Cheers! Summer’s not over yet, and I intend to make the most of every last drop of it before autumn creeps in. Found this one from Alexis Soler at Poolside at Drift in Nashville, and it’s basically summer distilled into a glass. Gin, fresh grapefruit, pink peppercorn syrup and raspberries. It’s bright, a little spicy, and stupidly refreshing over ice. Made for lounging by the water, but works just as well on a Paris rooftop. Cheers! The Belgian producer’s signature sound in full effect — harmonic, melodic house with an organic, emotive touch, built for sun-drenched dancefloors.
