Corn is resistance 🇲🇽

Our ancestors developed nixtamalization, cooking corn with an alkaline solution like cal. This process makes nutrients like niacin more available and creates the masa behind tortillas, tamales and so many foods that still feed us today.

When Europeans brought corn across the Atlantic, they largely took the crop without the Indigenous knowledge that came with it. As poor communities became heavily dependent on untreated corn, pellagra spread. Instead of understanding what was missing, some Europeans blamed the corn itself and considered it unhealthy. Over time, corn also became associated with poverty and “poor people’s food.”

But corn was never the problem.
For Indigenous peoples of Mexico, maize was and still is food, knowledge, culture and survival.

Empires changed. Borders changed. Languages were suppressed. Our food was looked down on.

And still, we made tortillas.
