A rainy day in North Carolina does not keep me away from my farmers market. The match stand makes me think of my daughter who absolutely loves her Matcha and it is so good for our brain immune system. I am never disappointed at the beautiful fresh vegetables I can get from the Corner Market and the nice tasty bites from the Thai stand we absolutely love their spring rolls and their beef jerky.

I used some of the markets purchases today to make the kale onion and sausage egg cups for the blood sugar reset number 12 with being functional nutrition. I absolutely love how easy it is to work their weekly meal plans and their semi-annual blood sugar resets, want more energy check them out.

Are you ready to try our soon-to-be-GSO-famous Vegan/Alpha-gal friendly Chocolate Chip Cookie? Cause it's here!

Had just enough time this week to bake up a batch. You will not be disappointed. I promise you that. Over all the cookie appears slightly smaller than our standard cookie, as these cookies just don't spread as much. That's what happens when you nix the butter. But from a proportional standpoint, they are the same size. They are thicker in the middle!

Cost wise, yeah, they are a couple dollars more expensive than our standard, but one bite should ease any doubt.

See you in just a few short hours @cornermarketgso

We’ve got a good variety of local, wild caught this week with Mackerel, Mullet, and, drumroll please… Red Snapper!
.
B-liner snapper or vermillion snapper are delicious and perfect for cooking whole! If you’ve never done that, don’t worry! It’s surprisingly easy and is a beautiful show stopper meal if you’re trying to impress a crowd.
Ask us for some tips, tricks and pairings!

See you tomorrow morning, 8-12!

Ya know what, I may be stuck having to avoid dairy, but that doesn't mean I can't have a cookie.

Oh what's this? Just a little something I whipped up, after spending like $40 at Whole Foods for 3 ingredients. Anyways, it's my first reckless attempt at a BagelGuy Chocolate Chip Cookie that is Vegan and Alpha-gal friendly!

She baked a bit dark, which that could just be my home oven which bakes dark, or it could be the ingredients. Either way, it doesn't affect the taste.

This was my first time ever using ingredients such as, Plant Butter and Coconut Oil. For the Chocolate I went all in and used Guittard Dairy Free chips. These are certified to be free of 14 known major allergens. For the sugar, I switched over to Whole Foods Certified Organic Sugar, which is free of bone char. I also used it to make my own brown sugar by adding molasses. To replace the eggs, I used Bobs Red Mill Egg Replacer.

First impression, the chocolate is expensive, and you darn well know why on the first bite. It's luxury. It's smooth and velvety. The cookie has a subtle buttery note, tasting nothing like Coconut or Plants, which I was concerned with. The cookie is slightly oily when warm, but leaving it on a paper towel remedies that. I assume that's the coconut oil? I also assume as it finishes cooling down it should set up more. Can you tell I really wanted a cookie? Like RIGHT NOW!

Could this be something new, for my carb loving comrades who have to skip dairy, whether by choice or the result of an unfortunate situation? Oh you never know about me.

See you soon. I would say I have a cookie to eat, but half eaten is all I can handle. It's a LOT of cookie!
