Cinnamon and dark chocolate banana bread 🍌

My go- to banana bread recipe, one that hits every texture, taste and flavour of the tastiest banana bread.

Ingredients:

- 2-3 large ripe bananas
- 2 eggs
- 1 tsp vanilla extract
- 1/2 - 13/4 cup coconut sugar
- 2 cup flour (spelt and / or buckwheat)
- 1-2 tbsp cinnamon
- 1 tsp baking powder
- sprinkle of salt
- handful walnuts
- handful dark chocolate chunks

How to:
- Preheat the oven 180 degrees.
- In a large mixing bowl, mash the bananas with a fork until soft. Add in eggs, vanilla extract, coconut sugar and whisk until combined.
- Add in the sifted flour, cinnamon, baking powder and salt. Stir all ingredients together. Add in walnuts and dark chocolate. Leave some chocolate to the side for toppings.
- Place parchment paper in baking tin and pour mixture into tray. Sprinkle on top left over chocolate.
- Place into the oven for 35-40 minutes.
- Take out of the oven and cool.

Slice up and serve! Enjoy x

A little reminder to myself that just because I teach movement every day, doesn’t mean I’m always prioritising my own.

I’ve definitely been slacking on making time for my own practice lately, but it’s just as important for me to show up for myself as it is for my clients.

You can’t pour from an empty cup x

Happy birthday @covereformerstudio 🎂

Where have those two years gone? I honestly don’t know!!

Taking a moment today to reflect, I’m so proud of everything the team have achieved. Over 1,500 customers through our doors, and a community that’s grown beyond the studio too.

Will I ever get over the fact that people choose to spend their hard-earned money with us? No. Thank you to every single person who has chosen Cove as their form of movement.

To our teachers (past and present) you’re the heart and soul of Cove. Thank you for everything you put into it. Love you guys.

Two years in, and there’s still so much I want to do. Feeling proud today, and ready to keep working for what comes next!!!!

And because a birthday needs presents… don’t forget to enter our competition over on @covereformerstudio to win a Liberty advent calendar 🎂✨

PS - cake by the GOAT @marplescakery ✨
