Maple Pecan Cookies

I teamed up with @coxbakeryee and @dear.lucee to make these delicious Maple Pecan Cookies by @sallysbakeblog . The texture on these cookies are insane. So chewy and caramel like in the center and crisp around the edges. But the real star is that maple glaze. Such a good cookies and so fun to be baking with these amazing ladies ♥️ be sure to check out their post and show some love!

Brownies time. Been seeing quite a number of brownie posts and drew inspiration from them (@coxbakeryee @shebakesourdough @mongstirs) to bake some. I wanted only fudgy brownies, squidgy in the middle, so had deliberately used less flour. Oh dear, I got what I wanted but out of the oven, my brownies were a tad too liquidy (photo 4) to slice through. I must salvage them. So after some cooling down, they went right into the fridge at 4C, and gained a firmer shape the next day. Swipe left to watch the video. I’ve used caramelised butter to gain the burnt taste. Once ready, each brownie can best be enjoyed with plain vanilla ice-cream. But the recipe needs fine-tuning. Will get there soon with more practise. For this bake, I did a double recipe.

Ingredients
150g. 55.5% dark chocolate (from chocolate bar)
120g. Unsalted butter
100g. Granulated sugar
100g. Palm sugar
3g. Sea salt
3 eggs. Large
1/2 tsp. Instant coffee powder / coffee emulco
90g. All purpose flour (used KA)
80-100g Dark chocolate bar (chopped loosely for sprinkling on, to get the choc chunk appearance)
150g. Raspberries

Prepare the caramelised / brown butter first.
Brownies were baked at 180C top-bottom heat, on medium rack, over 30minutes.

Sarah and David married last month at the Mercure Resort, Hunter Valley.

Based in Singleton, traveling to our Hunter Region Studio for our Bridal Basics Package, they opted for the 2 x 1.5 Hour Lessons to fulfil a First Dance to one of Chris Cornell's Songs "Finally Forever" which was then played by the One Fun Band on their Wedding Evening.

We love when our first dances are performed to Live Music. They also did day lessons which suited them perfectly as they are also a family of 5.

It looks like it was the most perfect day, your photos are simply beautiful, thanks to Vibe Photography for always capturing our dances so well & Thank you for choosing YFDC for your first dance. x
