GLUTEN-FREE MATCHA ALMOND PASTE COOKIES ๐Ÿต ๐Ÿช These wonderful chunks of goodness are so chewy and gooey in the center ๐Ÿ˜ the combination of almond and matcha flavor is actually so good and you need to try it out!

Ingredients:
- 1 egg
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1/2 cup sugar (I used brown sugar and coconut sugar)
- 2 tsp matcha powder
- 1/4 cup coconut oil
- 1/2 tsp baking soda
- 1 cup almond flour
- 1/4 cup coconut flour
- pinch of salt
(For the almond paste, I used @csaffitz almond crossaint recipe)

1. Preheat oven to 350F
2. Mix egg, melted coconut oil, sugar, and flavoring together.
3. Add the rest of the dry ingredients into wet batter.
4. Take an ice cream scooper of big spoon and lay some dough on spoon. Add a small scoop of almond paste in center and top with more dough.
5. Repeat for the rest of the matcha dough and bake for 12 min.

Enjoy!

Classes start tomorrow, which means that Orientation Week is officially over. This week, my classmates and I all tuned into our virtual orientation. Though not being in person this semester is a huge bummer, my roommates and I made the most of it and we still managed to have a lot of fun (and confusion due to major wifi issues) during orientation week! A huge shoutout to my amazing orientation leaders, Nick and Caroline, who not only made the week the best it could be, but the last few months leading up to starting dental school fun and excitingโค๏ธโฃ

Most notably, we got our white coats this week! Fun fact, the White Coat Ceremony was started in 1993 at Columbia Med School, and since then, the White Coat Ceremony represents the entry into the healthcare profession and the dedication to our future patients and ethical practice in dentistry. Having gone to my best friend's White Coat at Penn Dental last year, I was even more excited for my own ceremony, especially having all my closest friends and family to cheer me on. While my school did their best (think lots of compilation videos of us smiling and waving lol), I have to admit that many of us didn't feel all the feels that come with receiving the white coat on stage and being cloaked by faculty. The energy around the virtual White Coat Ceremony is just a facet of how many of us feel about starting dental school onlineโ€” it definitely can be a hard mental pill to swallow sometimes. However, it's so important to remember that the informality of zoom doesnโ€™t take away at all from your achievements, and you should be celebrated! My roommates and I celebrated by taking pictures on campus and having a HUGE KBBQ meal (@cravekitchn - check her out!).โฃ

With classes starting tomorrow, I'm excited yet nervous for the next 4 years ahead. I know it will be filled with its highs/lows, but I'm going to try to take it day by day and savor the journey. Any advice for me on how to get through classes, feel free to drop it in the comments, or share how you are feeling with starting virtual/blended school ๐Ÿ™๐Ÿผ
