I love that we grow our own vegetables at home. (This is definitely all down to the gorgeous @culinaryhubris ) she’s been hard at it over the past 8montha growing us potatoes, tomatoes, beets, shallots, onions, lettuce, chard, cord, runner beans, turnips on the rise, globe courgettes, horseradish which isn’t far off ready, spring greens and sprouts for Christmas. Super proud of what she has achieved and showing our little bean gardens are fun and has lots to offer.

A quick and easy throw it together chicken stew. Sometimes we don’t have time to do the labour a dish always requires and regardless of what people say you can make something however you like with whatever you like.

I had a Schwartz chicken rissoto seasoning pack in the draw and it had a lot of good flavours in it. So I thought why not. You can use any flavour packet you had that is full of herbs/garlic onion powder. Plus any extras you like. And I added some dried home grown thyme and basil courtesy of the beautiful @culinaryhubris plus some picked veg from #queenharvest herself. I used this flavour packet because I needed it gluten free for my sister in law @gemmak_life. Adjust the recipe below to what you have available and add as much veg as you like to pack it out to make it go further. This made 2 days dinner after feeding 4 adults and a 1 year old then 2 adults and a 1 year old. A cheap meal but full of goodness.

20ml veg oil
3 chicken breasts. (Or any meat you have available cooks or uncooked)
200g frozen mirepoix (or dice onions/carrots/celery) again swap any of these out for things like leeks etc…
80g GF flour (normal flour ok with you don’t need to be GF)
1x sachet of Schwartz chicken rissoto flavour packet. (Or whatever you have in the cupboard).
500ml hot water
2 tea spoon dried herbs if your choosing
2 large potatoes diced.
100g of any mixed veg you like.
Salt and pepper to season as you like it.

I used a Ninja Foodie but any slow cooker works and adjust accordingly to the size of your equipment. But have fun with it and test some flavours. Cooking like this should be fun not just a boring stew.
