Can't wait to use my knives at work again!
Today I want to talk about the connection with chefs and their knives. Working as a chef for nearly 20 years, I think I'm not the only chef out there that has a special relationship with their tools of the trade. For me, I'm not keen on anyone else using my knives. I look after them and sharpen them to have the edge I enjoy working with. Even though my knives look battered, they can all show the hard graft they have been through and tell the story of the chef. I wouldn't trust a chef that came into the kitchen for the first time with all new knives....it would concern me on their experience.
I have been taught that a knife is for life.....you look after it properly, then the knife will look after you. Most of the blades in my picture have been through my career and have never failed me!
Comment on your thoughts on knives and what you do to keep them top notch! 🔪😀👨‍🍳

When I read the original recipe of this stunning Banana Bread, I was disheartened to see there were eggs in it.

But I desperately wanted to devour it. I felt like Christian Gray, hopelessly wanting Anastasia Steele (If you are not sure what I am talking about then you need to watch 50 shades of Gray)

Inspired by this bodacious banana bread in @woolworths_au recipe catalogue, I immediately started thinking on how to veganise it. And vegan baker’s best friend flax egg came to the rescue.

I managed to get well rounded flavours with just the right amount of sweetness. Addition of Zucchini gives it moistness and lemon juice accentuates the flavours to “exquisite”.

And as you know, I am a fan of fun and easy recipes, and this one really is a fun and easy recipe.

Take your taste buds to Disco. Disco-Delhi burgers. Recipe link in bio👆🏽 Have a bite of these babies, close your eyes, and you will be in the middle of Chandni-Chowk, the foodie hub and the oldest Bazaars of New Delhi. Pan fried to crusty golden perfection with an exotic blend of spices…yummy.
These burgers use my hand-crafted spice-mix (Disco Delhi) from my authentic spice range. It will get your taste buds dancing and enjoy the real flavors of India.
I have got the replacement spices in the recipe for now for you to still enjoy these beauties👍🏼 Cooking with spices can be a challenge and a little overwhelming. That's why I am working on this spice range so you can take the guesswork and have more time to enjoy. I truly believe it will change the way you cook, and yes, it's all vegan.
