Recently, someone referred to me as “a woman on a mission.”
At first, I laughed.
Then it kind of made sense.

What I didn’t realize when I first envisioned this mission, this big goal I want to achieve, is that before building it, I would first have to become the person capable of building it.

I didn’t know the mission would include finding incredible people to share this journey with and collaborate alongside.
I didn’t know it would require facing my biggest fears and insecurities, while also learning to embrace and polish my strengths.
I didn’t know it would align me so deeply with who I am that the right people and projects would, in a way, start finding me.

And I definitely didn’t know I would fall in love with the process of becoming.
Of building.
The long days.
The heavy conversations.
The million things that don’t go as planned.
The self-doubt.
The pushing forward, even when tired.

This year was challenging.
In March, I had a medical emergency that led to surgery and forced me to stop completely for a week. Two weeks later, I was on a plane to Dubai to test the market and see if launching there was even possible.
A few months after that, multiple trips to London. And before @palandleo was even a year old, we were celebrating the UK launch.

The year went fast. So much happened. And all of it has been laying the foundations for what’s ahead.

When I look back, in a way, this is everything I wished for. Seeing it happen is both exciting and scary. Building something of this scale required me to stretch, adapt, and grow in ways I never had before, without a clear compass rather than my own feeling.

There’s been so much to figure out, and it’s been exciting, challenging, and genuinely fun.
Once I read that it’s hard to beat someone who is having fun. That’s exactly what I try to do as much as possible. Everyday. While pursuing the mission.

Thank you to everyone who has been part of this journey. I’m deeply grateful. And as I always say, this is just the beginning 🤎 thank you 2025.

A residency we’ll never forget.

Our time with Alexander Gamucci was nothing short of extraordinary. From the very first day to the last mini mini, we were swept up in a sea of laughter, late-night bonding, and unforgettable memories—each moment fueled by unstoppable passion, relentless dedication, and the kind of energy you can’t fake.

Alex, the unhinged king to our undeniable slay, the bitter to our ballen—your light, talent, and joie de vivre filled Amsterdam and TTT with something magic. It already feels too quiet without you. Thank you for trusting us, for uniting forces, and for making this residency something far beyond food.

To Daniele, without whom this residency wouldn’t have been possible—your quiet brilliance, unmistakable passion and behind-the-scenes mastery and mischief brought it all together. Grazie, always. Famiglia, sempre.

Mattia, our Director of Pour Decisions without whom we'd never embibe and vibe, ti vogliamo un mondo di bene. Thank you for always surprising us with your unmatched palate and never ending ability to select the most gorgeous wines that are unexpected and perfectly paired.

To our guests: thank you for entrusting us, for showing up fully, and for building this community with us. Without you, we’d just be a dinner. With you, we are a movement. A collective. A chosen family around the table.

Kris, Lotte, and Daniel—thank you for concepting, co-creating, and capturing the very essence of what Cucina Gamucci and The Talent Table truly are. Your keen creativity and sweat equity is not to be underestimated and should be cherished, embraced and deeply appreciated.

This is just the beginning.

With full hearts and full bellies—

x Dita
