“Bars are about unburdening ourselves, making real connection, enjoying great drinks and leaving the troubles of the world at the door.” Since first opening the doors of @1661bar in Dublin 7 back in 2019 @davemulligan has been putting Ireland’s native poitín firmly in the spotlight, championing small Irish producers and giving the spirit a starring role in its inventive drinks menus. The years since have seen the bar garnering multiple national and international awards, most recently being ranked No. 98 Best Bar in the World 2026, awarded by @the50bars (formerly World’s 50 Best), the first time any venue in the Republic of Ireland has ever featured in these prestigious global rankings. Fresh from celebrations to mark that well deserved honour, Dave tells @martinamurray114 about his fascination with poitín, staying ahead of global cocktail trends at the popular indie bar in Dublin 7, and what fans of his gorgeous concoctions can look forward to seeing him do next. 📷 @al_higgins

Goodbye 💚 I think it’s the perfect timing for this! I have no words to describe how I feel right now, after a little more than 4 years it’s time to say goodbye. Thank you to @1661bar and the people behind @davemulligan @raymurphy2006 because in 2022 you make this Mexican feel special and very welcome in a bar full of Irish people, same Irish people who became my family. I have to thank the bar for making me mature as a bartender but much more for putting in my way the people who made me grow as a human being. Thank you to everyone in 1661, the old staff and the new ones because I always learn from every single one of you. I also have to say that I am not just saying goodbye to the bar, I’m saying goodbye to this country (Ireland) So… Thank you IRELAND for being my home all this years, thank you for hosting me and my beautiful @brendanicolep all this time and for giving me the family that I actually never asked but I’m so happy to have I will always miss Ireland and Bar 1661 I love you all!!! We still have some time so let’s enjoy this time together. I see you the 1ST OF NOVEMBER in my LAST SHIFT in Ireland with the @agave_brothers at @thesackvillelounge Always a Pleasure, Sláinte

Last month we had the absolute honour of heading to Krakow to speak from the main stage at @betterbarshow alongside bestie @bon_vivantito, and later pop-up at the incredible @tag.cocktails 🔥🔥 During our seminar, we spoke about bar consultancy and the 360 degree approach taken by Tyler when we worked together during the relaunch of Kiki’s back in 2023, and the success that has followed. Later that night we popped up at TAG alongside @gorillabarskg @barglue and @jeffmorgen for an evening packed full of fun, flamingos and our trademark Hubba Bubba Buckfast. 🍸 Thank you so much to @mr.bobas @ala_baczykmazur for being the most INCREDIBLE hosts, what an amazing hospitality community Krakow has built. We can’t wait to come back again soon! 💖💖💖

Today, Dublin’s @1661bar was named No. 98 on The World’s 50 Best Bars 51-100 list - the first bar in Ireland to feature since The Merchant debuted at No. 17 in 2011. That’s 15 years without an Irish-based bar on the list - and Dave Mulligan and his team at Green Street are the ones to break the drought. Staunchly Irish and fiercely independent, 1661 has spent years championing Irish drinks, Irish hospitality and the country’s bar scene on its own terms. Dave and his team have done incredible work leading that scene forward, and while we’re delighted to see them finally get the international recognition they deserve, we firmly believe they ought to be much higher up that list. We also sincerely hope this isn’t a one-off. Ireland is home to so many innovative, hospitable, incredible bars - places adored by the communities around them, doing genuinely world-class work and worthy of international acclaim. Today, BAR 1661 put Ireland back on the list. Here’s hoping they’ve opened the door for more to follow.

Piękne wspomnienia z gościnnej zmiany @1661bar podczas @betterbarshow ! ❤️ 🇵🇱 PL W poprzedni weekend w The Trust spędziliśmy wyjątkowy wieczór w rozgrzewającym towarzystwie Irish Coffee. Jeden łyk wystarczył, żeby myślami wrócić do pięknych chwil z pierwszego tygodnia sierpnia — a dokładnie do wyjątkowej gościnnej zmiany baru 1661 z Dublina. 🥃 📷 @glgwskaa 🇬🇧 ENG Beautiful memories from @1661bar guest shift during @betterbarshow ! ❤️ Last weekend at The Trust, we spent a special evening in the warming company of Irish Coffee. One sip was enough to take us back to the beautiful moments from the first week of August — and, more specifically, to the unforgettable guest shift by 1661 from Dublin. It was an evening filled with great energy, conversations, smiles, and, most importantly, wonderful people who helped create such a special atmosphere with us. Thank you to everyone who joined us and made this event one we’ll remember for a long time. ❤️ Once again, a huge thank you to the entire 1661 team for the visit, the hospitality, and the great time we shared together! See you at the bar! 🥃 📷 @glgwskaa

What with being a former judge for Imbibe’s (RIP, hello BCB!) yearly Drinks List Of The Year, having the opportunity to travel around the globe and frequent some of the world’s finest best bars for 20+ years, and even collaborate and create some of my very own menus: I’ve witnessed some pretty nifty numbers. Perhaps my art degree is partially responsible for taking particular joy, interest and care in this aspect of hospitality consultancy. I’ve obsessively poured over concise one-sheeters, tomes of biblical proportions, augmented reality insanity, tactile 3D printed sculptures, and a whole bunch of QR code bullshit. Last week at the Better Bar Show I was introduced to BAR 1661’s new menu, and it has blown me away. Easily my menu of the year and one of my all-time GOATs. When I say it is a work of art, rest assured I am not being flippant nor colloquial. The attention to detail is immaculate, the GSM enviable. I love the appendix, featuring a detailed and heartfelt homage to the whole team and collaborators, as well as a wealth of handy links and contact details. The fundamental message is… powerful. I don’t even mind the QR Codes (yuck) on the last page, especially the one that highlights other local businesses; a growing trend that I have all the time for. From an artistic perspective: the use of negative space, the beauty found in imperfections, the gorgeous abstract photography, the considered footnotes using a distinctive tone of voice, the chromatic pairings, the playful camera angles of the drinks themselves… these all resonate strongly with my own sensibilities. Jaysus, Mary and Dave (and team) - give us other poor starving consultants a fighting chance, eh?
