HOTEL SEVILLA, MÉRIDA, MEXICO
"Once a 16th-century manor, with original stonework juxtaposed by slick concrete, @sevilla.merida transported me back in time. One block from Mérida’s lush central square, the 21-room hotel—by trendy Mexican hospitality collection @grupohabita —invites guests to linger. I spent my first morning by the pool, a geometric showpiece sunken into a courtyard and framed by thick, weathered walls that keep the outdoor area shaded all day. Then I moved along to the spa’s hydrotherapy circuit, which passes from a handsome sauna to a cold plunge in a light-filled grotto; it all felt like a memory pulled from a conquistador’s diary. After an elegant lunch at the hotel’s bistro, headlined by a bright gazpacho with melon and house ricotta, I slipped out to explore Plaza Grande just next door. Doubles from $400. —" @davidsho
