As Mexico revises NOM-070, the renewed debate over mezcal regulation invites a broader conversation about tradition, territory, and the living knowledge behind Mexico’s agave spirits. In her second piece for the Tequila Interchange Project Writer-in-Residence program, Carmen López @mezcaldelcarmen provides a comprehensive primer on the NOM structure, its agave spirits, and the revisions currently under consideration. The Writer-in-Residence program was made possible through the Slow Food Negroni Week Fund Innovation Award. 40 Years of @tequilasphilly: Past, Present, Future 🇲🇽 When @davidsurop opened Tequilas in September 1986, his mission was to bring a fuller expression of Mexican food and culture to Philadelphia. Copita Week is officially in the books, and we’re still trying to figure out how to put into words what this week meant to us. To every brand, bartender, educator, friend, and person who bought a ticket and showed up — thank you. Truly. Copita exists because we love these spirits, but even more than that, we love the people, places, traditions, and stories behind them. Getting to spend a week together learning, drinking, eating, laughing, and celebrating spirits from across Mexico is something we’ll never take for granted. This thing is a labor of love. A lot of long days, late nights, and probably a few minor breakdowns go into making it happen. Then the doors open, we see all of you together, and suddenly it’s worth every bit of it. Thank you for trusting us with this weird little idea. Thank you for caring about traditionally made Mexican spirits. Thank you for supporting the people who make them. And thank you for making Copita feel less like a festival and more like a giant family reunion. We fucking love you guys. Until next year.

This idea has been on our minds since the beginning of Copita: what if we could taste our way through Mexico and actually understand a place through what’s being distilled there? This Saturday, that idea becomes our Copita Symposium. Three seminars, three very different looks at terroir, tradition, people, and place. We’ll start in Jalisco, looking beyond tequila at the incredible diversity of spirits being made across the state. Then we head north, exploring the wild landscapes and traditions shaping the mezcales of Northern Mexico, before finishing in the south, where generations of producers have created some of the most distinct and beautiful spirits in the country. Mexico isn’t one terroir, one agave, one process, or one spirit. This is our chance to sit down, taste through it together, and understand just how fucking vast and special it really is.
