The hands of our kaarigars tell stories that words often fail to capture.

Every pleat, every stitch, every block is placed with quiet precision, built on years of dedication and deep focus.

While I sometimes struggle to stay with one task for even ten minutes, they sit for hours creating beauty with patience that feels almost meditative.

There’s no rush in their rhythm, no noise in their craft, just steady movement, day after day.

This is an ode to the magical hands of our kaarigars, the silent creators behind every piece we hold dear.

ഒരു പാൻ അടുപ്പിൽ വെച്ച് എണ്ണ ഒഴിച്ച് ചൂടാക്കുക. ഇതിലേക്ക് ഇഞ്ചിയും വെളുത്തുള്ളി ചതച്ചതും കറിവേപ്പിലയും ചേർത്ത് ഇളക്കുക.

ഇഞ്ചിയുടെയും വെളുത്തുള്ളിയുടെയും പച്ചമണം മാറുമ്പോൾ സവോള ചേർത്ത് വഴറ്റുക. ഈ സമയം സ്വല്പം ഉപ്പും കൂടെ ചേർത്ത് വഴറ്റിയാൽ സവോള വേഗം വഴന്നു കിട്ടും. സവോളയുടെ നിറം ഒരു ഗോൾഡൻ ബ്രൗൺ നിറം ആകുന്നതു വരെ വഴറ്റണം.

അതിനുശേഷം മഞ്ഞൾപൊടിയും മുളകുപൊടിയും മല്ലിപൊടിയും ഗരം മസാലപ്പൊടിയും ചേർത്ത് വഴറ്റുക. പൊടിയുടെ പച്ചമണം മാറുമ്പോൾ തക്കാളി ചേർത്ത് ഇളക്കി മൂടി വെച്ച് വേവിക്കുക. ഇടയ്ക്കു മൂടിക മാറ്റി ഇളക്കി കൊടുക്കാൻ മറക്കരുത്. അല്ലെങ്കിൽ ചുവട്ടിൽ പിടിക്കും.

തക്കാളി വെന്തു കുഴഞ്ഞുവരുമ്പോൾ കോഴി കഷ്ണങ്ങളും ആവശ്യത്തിന് ഉപ്പും ചേർത്ത് ഇളക്കി മൂടി വെച്ച് വേവിക്കുക. ചിക്കനിൽ നിന്ന് ഇറങ്ങുന്ന വെള്ളത്തിൽ കിടന്നു ചിക്കൻ വെന്തു കൊള്ളും. അത് കൊണ്ട് വേറെ വെള്ളം ചേർക്കേണ്ട ആവശ്യം വരികയില്ല. തീ കുറച്ചു വെക്കാൻ മറക്കരുത്.

ഇനി വെള്ളത്തിന്റെ ആവശ്യം തോന്നുകയാണെങ്കിൽ കുറച്ചു ചൂട് വെള്ളം വേണം ചേർക്കാൻ. ഒരിക്കലും പച്ചവെള്ളം ചേർക്കരുത്. കറിയുടെ രുചി തന്നെ നഷ്ടപ്പെടും.

കോഴി വെന്തു ചാർ കുറുകി വരുമ്പോൾ തേങ്ങാപ്പാലും കുറച്ചു കറിവേപ്പിലയും ചേർത്ത് മൂടി വെക്കുക. ഒരു തിള വരുമ്പോൾ കറി അടുപ്പിൽ നിന്ന് മാറ്റി വെക്കാം.
