Another day, another dessert. 🍨✨ Taking inspiration once again from a @chefrickstein classic - Prune & Armagnac Tart, our dinner party guests @ricksteinscookeryschool wrapped up their meal last night with a hug in a bowl. This is my twist on a classic Jam Roly Poly - a nostaglic childhood nod, with a refined spin. Instead of a heavy suet pudding, I used a light almond joconde sponge with rich Prune & Armagnac Jam, gently steamed to order, and finished with a silky Crème Anglaise. Simple, comforting, familiar flavours - with just enough of a twist to keep it exciting. Safe to say it was an absolute crowd-pleaser! 🥄💛 #jamrolypoly #nostalgicdesserts #dinnerpartydessert #rickstein #cookeryschool

Petit Fours created for @ricksteinrestaurants 🌊✨ A taste of the coast: 🦞 Sea Buckthorn Lobster Crafted as a vibrant final note, these sweet coastal treats showcase the electric, beautifully sour flavour of sea buckthorn - bursting with a sharp, complex acidity reminiscent of tropical citrus and sour orange. A refreshing palate cleanser. 🦪 Dark Chocolate Mussel Hand-painted @callebautchocolate 70.5% dark chocolate shell filled with a rich, umami seaweed caramel made from an infusion of dried wakame. Finished with a touch of @cornishsea_salt. #seabuckthorn #rickstein #cornwall #petitfours #pastryart

L’Agenais Coastal: Prune, Dark Chocolate & Sea Buckthorn - A recent dinner party dessert @ricksteinscookeryschool. A tribute to @chefrickstein’s iconic Prune Tart with Armagnac (The Seafood Restaurant Cookbook, p. 201). The name honors L’Agenais, the historic French region world-famous for its sun-drenched Agen prunes and oak-aged Gascon brandies. Here, the classic tart is reinvented as a dark chocolate mille-feuille with layers of @callebautchocolate 70.5% dark chocolate ganache and rich prunes steeped in Armagnac. To bridge French heritage with Cornish terroir, the indulgence is cut with the wild acidity of coastal sea buckthorn gel and micro lemon sorrel - creating a sharp contrast between sunny French orchards and the windswept shores of Cornwall. Finished with olive oil, roasted cocoa nibs, and @cornishsea_salt. Paired with Chambers Rosewood Vineyards Rutherglen Muscat, a fortified dessert wine from Victoria, Australia. Tasting Notes & Profile: Known for being rich, luscious, and intensely aromatic, this fortified wine typically features deep flavors of raisins, dried figs, toffee, caramel, and warm spices, balanced by a smooth, lingering finish. It pairs exceptionally well with dark chocolate, fruit tarts, blue cheese, and rich caramel desserts. Thank you @seafoodrestaurantteam for helping us with a few bottles 🙏🏻 The Seafood Signature Recipes.
