#hosted Formosa is a weekend pastry residency from Defined Hospitality that will live in Picnic’s bottle shop on Saturdays and Sundays from October 3rd to October 25th. The pop-up is helmed by James Beard Award-nominated Pastry Chef James Matty, who is bringing distinctive, sourdough-forward sweet and savory pastries to Picnic. Formosa will showcase the creativity Matty has become known for across his work at Defined Hospitality’s James Beard Award-winning “Outstanding Restaurant,” Kalaya, and Michelin-recognized Suraya, where his weekend pastries regularly sell out. Across Formosa’s menu, fermented sourdough serves as the foundation for both sweet and savory pastries that celebrate nostalgic flavors through a fresh, contemporary lens.
Signature menu items include:
• Dark Chocolate & Cherry Panettone
• Chocolate and Pistachio Croissant with pistachio butter and kataifi
• Ham, Cheese & Spinach Croissant
Pineapple & Almond Twist with coconut and passion fruit
• Blueberry Cinnamon Roll with sweet cheese frosting
Semolina Plum Cake with olive oil and lemon
• Maple-Pecan Cruller
• Prosciutto and Fig Sandwich
• Tomato and Olive Pizza
I got the chance the try these pastries and they are really tasty! I personally loved the Proscuitto and Fig Sandiwch and the Semolina Plum Cake the most! Definitely check out this pop-up, & be sure to tell ‘em PFAB sent ya!
