Going plant-based/vegan has been one of the best decisions I've made. It sparked my creativity in the kitchen again. I chose to pursue this lifestyle for some new health issues, and I'm working closely with a dietitian to ensure my nutritional needs are met. But more importantly, I did it to align with my ethical values. I've seen a small improvement in my mental health knowing that I'm eating in a way that feels right for me.

Here are some of my favorite meals from the past few weeks: Vegan Nachos with homemade cashew "cheese sauce", black beans, and @daringfoods shredded "chicken"

School bake sale ready with these dairy and nut free confetti sprinkle cookies!

I never want my child left out so every year when they do the big sale, I bake something so he could buy one of my treats and participate.

it seems a little crazy to have my own kid by my own cookie but this way he gets to feel just like everyone else.

This recipe is on my site if you wanna check it out! 🍪 🍪 🍪

Vegan Cajun Creamy Corn

Ingredients
5–6 ears of fresh corn, cut into halves or thirds
½ cup vegan Parmesan cheese
1 stick vegan butter, sliced (½ cup)
¾–1 cup unsweetened vegan heavy cream
5–6 garlic cloves, minced
1–2 tsp Slap Ya Mama Cajun seasoning
½ tsp Old Bay seasoning (optional)
1 tsp smoked paprika
½ tsp black pepper
Salt, to taste
Fresh parsley, chopped for garnish
One-pan instructions
Preheat your oven to 400°F. Arrange your freshly cut corn in a baking dish.
Season everything. Add minced garlic, Cajun seasoning, paprika, black pepper, and optional Old Bay directly over the corn.
Add the butter. Distribute the slices of vegan butter throughout the dish.
Pour in the cream. Add your vegan heavy cream around the corn, then toss or turn the corn to coat it.
Cover and bake. Cover tightly with foil and bake for 25–30 minutes.
Finish uncovered. Remove the foil, stir the creamy sauce, spoon it over the corn, and bake another 10–15 minutes until the corn is tender and the sauce is bubbling.
Garnish. Finish with freshly chopped parsley and spoon that Cajun garlic cream sauce all over the corn.

Vegan Apple Crumble Cups

Ingredients
For the Apple Filling
2 apples, peeled and diced
2 tbsp brown sugar
1 tsp ground cinnamon
1 tsp vanilla extract
1 tbsp vegan butter
1 tsp lemon juice
1 tsp cornstarch
2 tbsp water
For the Crumble Topping
½ cup all-purpose flour
½ cup rolled oats
⅓ cup brown sugar
¼ cup melted vegan butter
For the Wonton Cups
24 vegan wonton wrappers (2 per cup)
Melted vegan butter for brushing
Cinnamon sugar (optional)
Instructions
1. Prepare the apples: Peel and dice your apples into small pieces.
2. Cook the filling: In a skillet over medium heat, melt vegan butter. Add the apples, brown sugar, cinnamon, vanilla extract, and lemon juice. Stir and cook for approximately 5–7 minutes until the apples begin to soften.
3. Thicken the filling: In a small bowl, combine cornstarch and water to create a slurry. Pour into the apple mixture and stir continuously for 1–2 minutes until the filling thickens. Remove from heat and allow to cool slightly.
4. Prepare the crumble: Combine flour, rolled oats, and brown sugar in a bowl. Add melted vegan butter and mix until a crumbly texture forms.
5. Prepare the wonton cups: Preheat your oven to 350°F. Lightly grease a muffin tin and press one vegan wonton wrapper into each cavity.
6. First layer: Add a spoonful of cooked apple filling to the bottom wonton wrapper.
7. Second layer: Place another wonton wrapper over the first layer, gently pressing it down. Add another spoonful of apple filling.
8. Add the crumble: Generously sprinkle your brown sugar oat crumble over the apples.
9. Bake: Bake for approximately 15–20 minutes, until the wonton wrappers are golden and crispy and the crumble topping is lightly browned.
10. Cool and enjoy: Let the cups cool for 5 minutes before removing them from the muffin tin.
