Meeting new friends!! Whilst away in Gran Canaria, I got to meet up with Gabriella from @easycrumb

I don’t remember how I originally found her account but I started using her gluten free pizza recipe; I mean you can’t possibly go wrong with an Italians recipe for pizza!! Her husband said she’s a fabulous cook!! And I certainly believe that from photos of dishes she cooks. (Pizza recipe in my story highlights).

It started out as just sharing the safe coeliac restaurant’s we visit when we’re there, to finding out we were there at the same time!

There was only one place to meet!! The only fully gluten free place I know - @beccyboosbar so I messaged Ellis to book a table in advance! Always worth doing so he knows how many guests he’s cooking for!

Beccy Boos is a totally coeliac safe place to eat, Ellis has coeliac too & understands the challenges of eating out. He even has recommendations too of where else to eat so just ask!

It was like meeting old friends & establishing new friendships. A super evening & much discussed & learnt.

I even got a couple of onion rings when I arrived ❤️ as they are simply delicious!!

Highly recommend a visit when you’re in @welovegrancanaria

Looking for some help on holiday travelling? My guide is out today & will be available in my Coeliac Mums Club. It’s free to grab until the end of the weekend!
Full of top tips & info. And don’t forget to pack a peg or two 😉. Comment ‘holiday’ for a link.

Quite frankly, it’s summer on a plate.

Hi, I’m Nicky, cooking gf bakes & more, offering advice on how to start your journey when your child is diagnosed with coeliac disease. Need some help? Check my bio @gluten_free_little_cook for info or comment ’book’ & I’ll send you a link to get started.

But back to this awesome & easy dish; originally seen & inspired by an @easycrumb post this week.

It’s time for lots of salads in the UK, but what to do with peppers that might’ve seen better days. You have to make this!

In a frying pan add a good glug or two of oil (your choice - I used cold pressed rapeseed or EVOO).
Add sliced garlic & thyme strands.
Add sliced peppers, red onion, (I’m adding tomatoes too next time)!
And on the lowest heat, let it warm, sweat (!) & come together. Add olives, a few anchovies (they soften, mush down & no one will know that it contains them! They add a salty flavour not a fishy one!). Add S&P - mind the salt - check if needed before adding as anchovies are salty. Slowly cook for 20-30m, when softened remove the thyme stalks & add some fresh leaves only.

Slice the bread of choice - I used GF Tiger Loaf, sliced length ways, toasted in the air fryer til crunchy & golden, drizzle with oil, rub over with a garlic clove cut in half.
Serve by putting the mixture onto the garlic toast & enjoy. A drizzle of the oil from the pan adds extra depth of flavour too. And a sprinkle of torn basil leaves ❤️

Gluten free pizza. It’s not my coeliac teens first choice.

She’s not big on pizza. I normally have one in the freezer for emergencies but… it was 4pm on a bank holiday Monday.

The joy of coeliac disease is preparation. You can’t just nip to the local shop to grab a gluten free pizza, they don’t carry them. But I do keep grated mozzarella cheese in the freezer (a handy top tip!) ready for when needed.

Emergency pizza it was - I just cut down the proving time!

Sometimes the simple things are best.

Top pizza tips
Do invest in some Caputo GF flour - expensive but great for pizzas

I cook mine in a cast iron skillet - sealing the dough first before putting flipping & adding toppings - a baking tray will work just as well

Tomato sauce - you can use passata if kids don’t like lumps, a tin of chopped tomatoes whizzed up in a blender or simply as is. You’ll just need to drain a little juice.

Cheese - I always freeze a bag of mozzarella cheese especially if it’s been opened. Saves it going off & getting lost in the fridge!

Full Recipe in story highlights - as supplied by @easycrumb.

International Women's Day!

I'm celebrating women in general today. From my amazing mum who can whip up anything from nothing and has learnt to make gluten free food too so her grand daughter doesn't miss out. My sister who can spot cross contamination in cafes & to my two beautiful daughters who inspire & enrich my life daily (and sometimes test my patience too!!).

There are many things to be grateful for when you're a woman and many things that are harder than they should be. But we can pick things up, create something and help others.

All these amazing women I've selected here today are awesome.

They bring something else to the table, they've grabbed their idea, created their product and help others. From improving muscle density, providing independence to those who are hindered due to age or circumstance, sharing recipes & courses when GF with other allergies too, fun gf ideas for kids when diagnosed with coeliac disease, best tasting cordials, making chocolate & supporting ideas, as well as making the best smelling & natural skin products ever. Everyone has something they bring to the table.

They were brave enough to put their foot into the world of social media, through need or circumstance. Whichever it was, it makes the world a brighter place.

Happy International Women's Day. Thanks for being inspiring.

NOSOTRAS
Ritratti di Donna

MAGALY AROCHA RiVAS

attraverso le sue opere
ci narra

Ballerina
vulnerabile, nasconde il volto dietro il proprio corpo
forte e dai muscoli definiti
ottenibile solo attraverso una costante e forte determinazione,
ella è metafora della donna contemporanea
e
Acqua
punto culminante della mostra rappresenta il femminile per eccellenza,
adattabile e ricettivo

come l’acqua che riesce ad aggirare gli ostacoli presenti lungo il proprio cammino

questa è la visione che

Quickest reel I have made yet but just had to share how EASY this lunch was to make! Tried @scharglutenfree @schaersenzaglutine_it ready to make pasta for the first time and I am fan!😍♥️ It was so easy to whip up and tastes bloody good! I won’t lie I was skeptical about the taste and if it will really taste like a proper Italian pasta and will the flavours last but it definitely took me by suprize and is definitely good for a full meal 🥹🥰.

📍 @lasoffittarenovatio in Rome last night!! AIC certified- Association of Italian Celiacs

Amazing restaurant that gives the option for everything on the menu to be gluten-free, including all fried food, pizza, pasta, and desserts 🍨🍝🍕

Everything that is gluten-free comes out with a flag eliminating any mix-ups and cross contamination.

We got arancini, calamari, pizza, and a calzone - all better than the next! I know this is a lot of food but when you’re in Italy and they have a gluten-free menu, you gotta try it all🤣

Chicken cordon bleu lollipops - inspired by the brilliant @easycrumb. The kids loved these 😋

Ingredients:

3 Chicken breasts
gluten free polenta
Emmental cheese
Three slices of ham
Olive oil to taste

Method:

1. Between two sheets of clingfilm, beat the chicken breasts with a rolling pin so that you have a thin chicken escalope.

2. Coat it both sides with polenta. Place the cheese and the ham in the centre of the chicken breast and roll the breasts so that you have thick sausage shapes. Skeewer each ‘sausage’ with 4 toothpicks and cut them in 4 so they you have 4 lollipops.

3. Fry the lollipops in a frying pan with a little olive oil, and serve.

Gluten Free Pizza

Everyone’s holy grail!!

I’ve made it with yogurt & GF SR flour, GF bread flour, oil & tried a yeast one before.

I saw Gabriella’s post on how to make a yeast based pizza. If an Italian is talking about gf pizza, it has to be tried.

Full details are in stories so you can screenshot.

Definitely get some GF Caputo flour - the price tag is worth it - you can probably do half & half with a regular gf plain or rice flour to make it go further.

Check your yeast is in date & gluten free. There are a couple on the marks that are not suitable.

Don’t be scared of it. It’s just dough. In this heat it will change the timings a little. Use your smell, sight & fingers to see how it responds.

It might need more water
A dash of oil
It might need less water

Everything is an experiment.
See how it goes

If you give it a go, let’s see!! Tag me in your picture.

Happy Saturday!! I’ve a house to get picture ready 😢

Whether it’s pizza, cake or something else, if you need to find out about how to help your child, my new book is out to pre order - only available through me!! Pre order your copy via link in bio!!
