Smoky Red Bean, Orzo and Bacon Stew is what I’m enjoying on this rainy day in Southern California. The hardy beans and orzo remind me of pasta e fagioli, but my version has baby spinach and crispy bacon on top. I love the luscious texture and cozy feeling of this stew on a chilly evening. It’s simple ingredients made delicious.
Ingredients
6 slices bacon
8 ounces dried red beans, soaked
1 white onion, diced
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 black pepper
14 ounces crushed tomatoes
1 quart chicken broth, divided
2/3 cup orzo
4 cups baby spinach
Enjoy!

Smoky Pork Pozole is a Mexican inspired soup made with pork shoulder, Chipotle chilies and canned tomatoes. What makes this super easy is that you can use leftover shredded pork to create this wonderful meal. If you don’t have leftover pork, you can use diced pork shoulder and increase the cooking time to create soft shreddable meat that bathes with hominy and other pantry ingredients.

It’s a warm and cozy meal >>
