🎉 The first group of 2025 trainees has completed their training 🎉

Kicking off the year strong with our 2025 Training Programme at the R&D Lab in Rome! Over the past weeks, Leidy, Laure, Ruben, Erica, Maria-Alejandra, and Lucero immersed themselves in Cacao of Excellence standards—from physical analysis to roasting, milling, and sensory evaluation. Swipe to hear firsthand about their experience! 🍫

Working alongside our Lab team 👩‍🔬👨‍🔬, they gained hands-on experience processing the 2025 Edition Cacao of Excellence Awards bean samples into cacao mass. Through this, they explored the incredible diversity of cacao beans from around the world while applying our rigorous processing standards. 🌍

Now, they head home with their training certificates and a wealth of new cacao knowledge! 🌱🍫

What an adventure this has been. There aren’t enough words to truly express how incredible the training at the @cacaoofexcellence lab is.

It is one of the single most wonderful sensory experience. It is a magical human experience. It is full of surprises, warmth, and passion.

To my colombianos: gracias por TODO. Fue una experiencia grandissima y yo sé que no se acaba aquí. Vous me manquez ♥️

To the new comers: take it all in. It is pure joy, magic and passion. I hope you will have as wonderful an experience as I had. Belle continuation! ✨

To the @cacaoofexcellence team: I am so very grateful and thankful you welcomed me with such kindness and open-minds. We are so excited to be expanding our in-person #training for cacao and chocolate professionals from cacao-producing #origins. As participants acquire hands-on learning of the internationally agreed-upon protocols found within the Guide for the Assessment of Cacao Quality and Flavour, we believe the knowledge they gain is a critical step towards strengthening further endorsement and perpetuation of a common language on cacao, as well as standardardised, scientifically rigorous practices in evaluating cacao quality and flavour.

Growing this network for the ultimate benefit of cacao producers and the sector is a thrill. This is just the beginning..mic-drop 🫣🎤🚀💥
