Too many restaurant operators think a packed house means profit. It doesn’t.

If you’re not watching every number: check averages, food costs, liquor margins, COGS, return customer rates, then you’re flying blind.

The most important metric? Probability.
You need to know the likelihood that your pricing, promos, and decisions actually lead to profit. Not just packed tables.

Every event, every special, every “kids eat free” night needs its own P&L. Because if your margins aren’t adding up, the hype won’t save you from a payroll crisis.

Most people think I’m out of my mind for how much I spend on training.

But if someone shows up with the right mindset and character, I’ll invest in them every time. Skills can be taught. Drive cannot.

That’s why training is the first line item in the budget for me. It’s not optional. It’s the foundation.
