Christmas 2025 ๐ŸŽ„โค๏ธ

Merry Christmas 2025 โค๏ธ Yesterday was a wonderful Christmas with my family and I was the cook this year fuelled by a cheeky Bucks Fizz before cracking on! I hope you all had a blessed lovely day tooโค๏ธ

Spicy Pork Casarecce

High-Level Overview:
-British Spelt Casarecce
-Pork Mince
-Homemade Sichuan Chilli Oil
-Doubanjiang
-Garlic
-Scallion
-Soy Cured Egg Yolk
-Grana Padano

Very quick & easy lunch time pasta. Trying to work through some freezer bits and found a packet of @farmisonuk mince pork. Decided to take it in a spicy direction by cooking it down in a whole load of doubanjiang.

Threw in @northernpastaco Casarecce and tossed together with some homemade Sichuan chilli oil for just a lil more spice and that gloss. Topped with a soy cured egg yolk and finally some Grana Padano. And thats it, an easy pasta dish that brought so much flavour to the table.

This is definitely inspired by the process of making Mapo Tofu, I was looking to include some Mala flavours into a pasta dish. My Sichuan chilli oil is heavy on sichuan peppercorn oil (obvs), some serious numbing action was taking place. And on the cheese, I don't think its worth skipping - a tiny bit of dairy relief from the heat.

Quick to make - Quicker to munch!

Happy cooking y'all :)

Mapo Chickpeas

I'm always craving Mapo Tofu. The mouth numbing from the sichuan peppercorns, the heat, the soft mellowness of the tofu, and the unbeatable rice compatibility. It's completely perfect.

With that being said, I don't always have the tofu that I like and I don't always have time to go and buy some. I do always have a jar of chickpeas in my pantry. These particular beans are from the wonderful @boldbeanco and are their Queen Chickepeas - my fav bean hand down.

Anyways, I got to thinking, what if I make Mapo Tofu but replace the tofu with chickpeas? Will it still taste good?

Well the answer is... its pretty awesome! More earthy and hardy compared to the light and airy tofu. A little more stew like but with those same incredible flavours. I would say it's in no way a replacement, it's a different thing altogether. (In my opinion that isn't a bad thing at all).

Now there's a ton of great recipes online, I personally love the one from The Woks of Life or Kenji Lopez-Alt. But if you're interested in what I used, I'll add it below.

-Ginger
-Garlic
-Scallions
-Shallots
-Sichuan Peppercorns
-Dried Chillies
-Chickpeas
-Ground Pork from @farmisonuk
-Sichuan Pixian Chilli Bean Paste
-Dark Soy
-Sesame Oil
-Chinkiang Vinegar
-Lao Gan Ma chili crisp
-Sugar
-S&B Japanese Gravy Mix

If anyone is keen to try this definitely let me know! Would love to hear what y'all think about it. With cold weather right on our doorstep this stewy, beany, mouth numbing creation might just be what we all need right now.

How I make my steaks better

This isnโ€™t a recipe - but I think it could be a helpful guide if youโ€™re looking to boost our steak night flavours.

I made a recipe for Thai Grilled Steak Salad from Red Hot Thai Kitchen years ago and have continued to modify it based on how Iโ€™m feeling and what I have available.

The sauce is what never changes for me (because I always have this in):

-Lime juice
-Sugar
-Golden Mountain Seasoning Sauce
-Fish Sauce

For the salad, I often use the following:

-Thai Basil (FAVOURITE)
-Mint
-Coriander
-Chillies (use what lines up best with you spice tolerance)
-Shallots
-Red Onion
-Green Beans
-Scallions

Iโ€™m also using Namprik in this dish from @wildriceworld . They were kind enough to send it to me (gifted) and itโ€™s really really really great! I donโ€™t need to say that but I think it added a lot to this and Iโ€™ll be BUYING myself more.

The steaks for this video are from @farmisonuk , I love cooking with their Onglet, a great cut that feels more weeknight friendly.

Hope yโ€™all make this one and enjoy

Last weekโ€™s 9โ€“5 nourishment:

1โ€“2. Monday office day

I always make my first coffee of the day after ticking off the task on my to-do list I feel the most resistance to. (Prone to procrastination, so this works wonders.) Weโ€™ve got a @brevilleuk barista machine in the office, so usually itโ€™s an espresso or cortado. Followed it up with oats with Greek yoghurt mixed with collagen + cacao powder, berries, and figs โ€“ 42g protein, 11g fibre ๐Ÿ™Œ

3โ€“5. Tuesday shoot day

Ok OOO day at the beginning of the week is always fun. Over in hackney - plenty of novelty dopamine. We ordered lunch in from @atislife_, I had 4x roasted broccoli โ€“ YUM. Dinner was my favourite combo: roasted squash, beef mince, rocket, balsamic + parmesan, topped with raw honey and flaky @maldonsalt ๐Ÿซฐ

6โ€“8. Wednesday office day

Since cancelling my gym membership in March, Iโ€™ve done 4x @madelainerascan workouts a week without fail โ€“ my favourite habit (and energy) to start the day. Also, bolognese is back. Had it with rocket, balsamic + parmesan (standard) plus a couple of @coolchileco corn tortillas

9โ€“11. Thursday wfh day

Head-down laptop day at home started with a teaspoon of black seed oil (honestly, VILE). Iโ€™m trialling it for its anti-inflammatory and digestion-supporting benefitsโ€ฆ will report back. Dinner was rotisserie chicken bone broth plus a load of the jammiest @marksandspencerfood figs. Next slide = the bedtime routine Iโ€™ve stuck with since July (dark choc or medjoolies + @theestatedairy is a non-negotiable on that list)

12โ€“14. Friday office day

London looking glorious on this walk into the office, the current office breakfast Iโ€™ve been having every day, steak date night as usual on a Friday (went out for it, so hereโ€™s one from the Friday before) ๐Ÿฅฉ๐Ÿซ๐Ÿฏ

15โ€“17. Saturday

Cortado at the farmerโ€™s market and bought my first bottle of raw milk. The lovely lady on the stand and I had matching rouge noir nails โ™ฅ๏ธ Later, hot choc made with the raw milk โ€“ 10/10 for taste and digestion feeling good โœจโœจโœจ

18โ€“20. Sunday

Collagen + blueberry oats, oxtail is back !!, and fresh sheets to round off the week ๐Ÿ’œ
