Today is National Pancake Day, but these aren’t your average flapjacks… 🥞

…they’re “lettu,” aka Finnish pancakes! 🇫🇮

And in my part of the world, when you think of Finnish pancakes, you think of The Hoito.

Established in 1918, The Hoito Restaurant is a veritable institution in Thunder Bay, Ontario, located on the north shore of Lake Superior. ❄️

Founded by Finnish workers in nearby logging camps craving a home-cooked meal, The Hoito today is best known for its “lettu” — thin, dinner-plate-size pancakes served with a sprinkling of sugar and a hefty helping of syrup. 😋

Sadly, The Hoito had to close its doors last December due to a fire at its iconic home in the Finnish Labour Temple.

But things are looking up — The Finlandia Co-op of Thunder Bay (@finncooptb), which operates The Hoito, just announced that they’ll be serving up Hoito pancakes and other popular menu items twice weekly at the @tbaymarket.

And what’s more, the Co-op says they’re closer than ever to reopening The Hoito at its original location! 🎉
