Fade Weddings.

Something we thought we’d never say, but here we are cooking for the beautiful Zoilitta and Ed and their 26 guests.

An intimate gathering, all food cooked over fire, and a table full of good folk, celebrating a special day.

It’s not mass catering, and it’s certainly niche, but after a day like this, we’ve decided intimate weddings are our thing.

PS. We did not make the cake but our super talented friend Alice at @maude.and.marmalade did. GO CHECK HER OUT.

Yesterday was a memorable afternoon in Wiltshire celebrating the launch of @studio_supple ‘s exquisite new wallpaper collection.✨
It was an honour to perform a live pinching demonstration in Scarlett’s beautifully curated barn, showcasing the making process behind our tableware pieces. The day concluded with an incredible live-fire feast by @anaortiz_chef @firemadeuk, served directly on the collection—bringing form, function, and material together.
Thank you @studio_supple and her team for hosting such a thoughtful gathering of design and craft.

Another look at this bespoke oak BBQ area completed earlier this year. 🪵🍕

A bespoke oak BBQ area completed earlier this year. 🍖🪵

Hand-selected oak, traditional timber framing and every joint cut and crafted by hand.

Heavy oak posts and beams, bespoke braces and traditional pegged joints all built to suit the space.

A proper bit of timber work built to last.

The Welcome Table opened this year’s @regengatheringjersey at @le.tacheron farm, cooked with the Jersey Filipino community. The evening was beautiful.

We brought fire and local produce to kick off the weekend 🔥

Standout for me was Jersey pork belly lechon. Local goat kare-kare alongside it, and Ivy and her team cooking the dishes they make at home.

Regen Gathering taught me a lot and has inspired me to make change.

When Ralph and Courtney asked me to cook authentic Lebanese food for their wedding, and his mum just happens to be a well known chef, I said yes. Then felt the pressure build for the next 12 months 😂

Zoom calls with Mama, ingredients sent over from Lebanon, and a week before the big day she joined me in the kitchen. Learning to make proper hummus, muhammara and tabbouleh from her was a real privilege.

I used her spices to make rubs for the chicken and lamb, cooked over fire by the tipis on a baking hot Jersey summer’s day.

I couldn’t relax until Mama gave me the official thumbs up. When it finally came, I could breathe again. Feeding Lebanese and Jersey folk around the same table was magic.
