"Slug eating a Shroom" ft @platesfromjay

Ricotta herb stuffed "Banana Slug Ravioli", foraged mole, confit & pickled mushrooms, yarrow & marigolds plated on @bevellisfineart custom "log bowl" to bring the dish to life. (Slide 4)

I think this is the most fun I've ever had crafting a dish in my life. I see a hundred slugs a month on my forage walks and have become quite fond of them. The guests love them on the forge walks and they have a certain whimsy when you get lucky enough to catch one nibbling on a mushroom on the most floor. I get asked all the time if they are edible (yes, ask @jpeatsbc) but I figured this was a more approachable take.

See the video of the slug model who inspired the dish on slide 3.

Ive had this idea in my back pocket for sometime and found the perfect time to serve it. The giggling in the kitchen was abundant and the guests felt the fun in the air as the plate hit the table with shock and awe.

Shout out Justin for making the little guys and for one of the most enjoyable services I've had in a very long one.

Bev created these gorgeous bowls inspired by trees on @fawnbluffprivatelodge alongside common mushrooms I've cataloged in the past. Couldn't think of a more perfect collaboration to present this story on.

Mushrooms are a combination of hedgehogs, chanterelles, chicken of the woods, and chest nuts both found onsite and gathered by @forestfordinner
