Vermillion, mole amarillo, porcini, sunchoke

The mole is made using tetsukabuto squash, angel’s hoja santa, nothstine masa miso i made in 2022, and a dashi infused with the squash seeds and roasted skins. We pickled the leftover porcinis from the @evanfunke collab (thank you chef) and are finishing the dish with one of my favorite things—sunchoke chips.

Monterrey asian pears, stracciatella oaxaca, yerba santa

These are my favorite pears from one of my favorite farmers. I saw a clip recently on how to make stracciatella and thought it would be cool to make with queso oaxaca instead of mozz. It came out really nice. The hoja santa oil ties everything together. Less is more. Thank you Becky.

Chilled long beans, salsa macha, fried peanuts

Started blanching these for the steak set last week and really liked how they ate cold. The long beans taste a little like peanuts. This reminds me of cold sesame noodles.
