roast chicken salvadoreño
beets, watercress, torn bread, relajo

Pulling inspiration from a staple Salvadoran dish, pan con pollo. An essential, if not mandatory, meal on every salvi dinner table come Christmas time.

Chicken (sometimes bones and all) is braised with relajo, an earthy and nutty mix of spices, then married with raw crunchy vegetables, hard boiled eggs, and a respectable amount of the chicken braising liquid. All enveloped in a crispy bread roll that is destined to fall apart.

Not much is recorded or published when it comes to Salvadoran cuisine. Its been a challenge to replicate flavors of my childhood with only nostalgia. Thankfully theres @anthony_salguero and @karla_tv who have been able to share the culture to the masses and who’s recipes I have used as guidance.

Also a special thanks to @eiaeeo for encouraging me to put this dish together. taken in Rustic Canyon Restaurant by @g_serrano24
