🍉 THE ULTIMATE SPRING SALAD 🍤🌿

Fresh, crunchy, a little spicy, a little sweet, and perfectly sour! This watermelon and feta salad with grilled garlic prawn skewers is giving everything a spring meal should be. 🤌🏼

I grabbed my fresh ingredients from @rhodeswaterside and turned them into the perfect spring spread!

🍉 WATERMELON & FETA SALAD WITH GARLIC PRAWNS

Ingredients:
🍉 ¼ watermelon, cubed
🥒 2 cucumbers, sliced
🍋 Juice of 2 limes
🌶️ Tajín seasoning (measure with your heart!)
🌿 A handful of fresh mint leaves
❤️ 1–2 tbsp pomegranate molasses
🧀 1 slab of Greek feta
🍤 @colessupermarkets garlic prawn skewers

Method:

1. Cube the watermelon and slice the cucumbers.
2. Squeeze over the lime juice and sprinkle generously with Tajín.
3. Add the fresh mint and drizzle with pomegranate molasses.
4. Toss everything together, crumble the Greek feta over the top and finish with another drizzle of pomegranate molasses.
5. Cook your garlic prawn skewers and serve alongside your salad.

✨ The secret? You want that perfect balance of sour lime, a little Tajín spice and just a touch of sweetness from the watermelon and pomegranate molasses! There’s no rules, measure with your heart! ❤️
