What goes great with champagne? Caviar! Did you know you can add Tsar Nicolai caviar to anything on the menu at Buvons? Our personal favorite is with a Good Dough baguette and salted butter. Sometimes it’s just the simple things that stand out!

Helloski Friends! A little recap of our last handful of weeks here at Nascent…

@breadfestpdx this past Sunday was a carbed-up thrill ride. So many wonderful folks came through to live the lye, and we couldn’t be more appreciative!

It also helped scratch a big ol’ R&D itch for us to bring some other fun nuggets to share (see next four photos).

Deep gratitude to Brad & Shyla @gooddoughpdx for putting on such an outstanding and thoughtfully curated event where we could showcase our wares alongside some heavily talented bakers.

We can’t wait for next year! 😘😘😘 #livethelye

Marbled everything Philly soft pretzel. Barley focused. Levain/poolish. Heckin’ caraway and savory bits.

Tons of fun to see the result, despite the relative tediousness of getting pleasant marbling effect with a lower hydration dough.

Confit garlic/chili crisp sourdough focaccia. T85 and hard red wheat focused.

Nut & Seed demi baguette. Levain/poolish. T85/hard red wheat focused. Pepitas, sunflower seeds, flax, walnuts.

Took a while dialing this on our large convection & much more room to improve this lil’ buddy - extremely pleasant flavor result.

Spending Oktoberfest at one of our second homes @heaterallenbeer / @golddotbeer in September.

We love you all so much

@moonstoneandfern ❤️❤️❤️.

BRING BACK THAT DUNK TANK NEXT YEAR!

Special shout out to our beloved @kc.syring who is always there to support us along the way 😘. Without you, we would be a giant ball of perpetual chaos.

There’s one phrase I live my life by, and that’s ABC: Always Be Carb-Loading.

Naturally this led me to an event created for me, Breadfest! Can’t believe this is only one day! We got some yummy sourdough (of course), browned butter brownies, oils and vinegars, pretzels and bagels! There was also pizza, butter and so many pastries! Next year I’m bringing a grocery bag and a second stomach 😋

Bread Fest 2026 is done! 🍞💛☀️ @breadfestpdx

I had such a great time again!

This will be my last event for a little while as I settle into my new weekend barista job. ☕️

Thinking back to my first Bread Fest in 2023, it’s amazing to see how much bigger it has grown!

And the founder’s family has grown, too. 🥹 Last year, there was a little one on the way, and this year, the baby is here! 👶💛

It’s so lovely to see how much can grow and change over the years.

Thank you for another wonderful Bread Fest and for letting me be part of this beautiful community.

Until next time, keep sharing happiness & smiles! 💛☀️😊

Sunday Fun Day Agenda

1. @breadfestpdx - great event with so many amazing bakers! I was excited to say hi to a favorite @southwindmicrobakery 🥰 and found some great stuff!

What I got:
@nascent_bread furikake pretzel
@southwindmicrobakery snack mix, waffles, lamington, earl grey cookie
@thespicedoven curry cheddar sourdough
@garlikipaste chimichurri and umami garlic paste
@hansgardenco olive oil
@steelportknifeco bench scraper
@bestcoastbagels_oregon black pepper cherry bagels
@gooddoughpdx bread sampler

The line to get butter from @cowbellpdx was extreme so, oh shucks will need to run by the store for butter... and possibly cheese and prosciutto... Who am I kidding, definitely cheese and prosciutto.

2. Lunch @awaydaysbrewing with @champs_burger + @euzumeh

* herbed lemon garlic fries
* burghars - delicious Champs burger with zhoug aioli)
* grilled chicken caesar wrap - tahini caesar that included radicchio... I'm a major sucker for anything radicchio
* tahini chocolate chip cookies

Great day. Thanks @gonzalesmcneal & @kiltedtaz for hanging out!

BREADFEST RETURNS 10/18 🍞🥖🥨🥐🥯

A little about us:

MIGHTYFINE is a one man operation with the mission to bring a Penn-Dutch pretzel to the PNW. I grew up with the snack as a daily ritual. In 2025, Mighty Fine brought that tradition to Portland, hand-shaping every pretzel using traditional blend of Amish / Bavarian recipes paired with exclusive Pacific Northwest ingredients. No shortcuts, no big team - just one guy up before dawn, rolling dough with the same care his hometown had been doing for generations. Mighty Fine is proof that the simple pleasures are still worth doing right. No fuss, just pretzels. 🥨

We are grateful for the opportunity to share them this year thanks to Brad @gooddoughpdx for inviting us.

Come support, grab a pretzel, and check out so many other talented artisans at this year’s fest.

Meet Brad Kohler — the baker behind Good Dough Bakery and co-founder of Bread Fest PDX.

Brad has spent years honing his craft, specializing in long-fermented sourdough bread made with quality ingredients, patience, and a whole lot of care. For him, great bread is about more than what comes out of the oven. It’s about the people who make it, the community that supports it, and the connections built around sharing something good.

That same passion helped inspire Brad and his wife (me aka Shyla) to start Bread Fest in 2023 — a celebration of Portland’s incredible baking community and the makers who make it special.

From the dough he works with every day at Good Dough to the community of bakers brought together at Bread Fest, Brad is all about good bread and the people behind it.

Here’s to the craft, the community, and the long fermentation that makes it all worth the wait.
