Homemade Pancake Mix | Big Batch Pantry Staple
Why buy boxed pancake mix when you can make your own at home? ❤️

This homemade dry pancake mix is easy to prepare, uses simple pantry ingredients, and is ready whenever you're craving pancakes!

Ingredients:
7 cups all-purpose flour
¾ cup granulated sugar
2 tablespoons + 1 teaspoon baking powder
1 tablespoon + ½ teaspoon baking soda
1¾ teaspoons salt

Directions:
Add all dry ingredients to a large mixing bowl.
Whisk thoroughly until everything is evenly combined.
Transfer to an airtight, food-safe container.
Store in a cool, dry pantry.
Ready to make pancakes? 🥞

For approximately 6 medium pancakes, combine:
1¾ cups homemade dry pancake mix
¾ cup milk
1 large egg
1 tablespoon melted butter
½ teaspoon vanilla extract
2 tablespoons sour cream (optional)

Mix gently until just combined. Let the batter rest for 5 minutes, then cook on a lightly greased skillet over medium heat until golden brown.

Piggy's Kitchen Tip: Don't overmix! A few lumps in your batter are perfectly fine.

Save this recipe for your next homemade breakfast!

Sea Salt Toffee Chocolate Chip Cookies ✨🍪
Gluten free ofc!

My favorite way to eat these is warm right out of the oven! My oh my the crunch of the toffee, with the ooey gooey chocolate, and pinch of salt to take off the sweet edge gets me every time! 😮‍💨

I’ll have them this Saturday at The Broadripple Farmer’s Market 9am-12pm in Indy!

Tip: warm em up in the microwave for 15 seconds and you won’t regret it!

❗️DISCLAIMER: contains: almonds!

Welcome to our very ordinary life. 🏡
THIS. IS. NORMAL. LIFE!
The hand-me-downs.
The budget-friendly groceries.
The toys scattered across the floor.
The meals made at home.
The things we want but have to wait for.
The little things we find ways to make work.

We’re not living some Pinterest-perfect life, and we certainly aren’t keeping up with everything social media tells us we need.

We’re just a family doing our best, raising our babies, living within our means, and learning that a beautiful life doesn’t have to be an expensive one. 🤍

Some days, the budget feels tight. Some days, we wish we could do more. But we’re choosing to be grateful for what we have while working toward what we hope for.

Because a home isn’t measured by how much money is in the bank, but by the love that lives inside it. 🫶🏻

If you’re living a similar life, I hope you know you’re not alone.

Can we normalize showing what real family life looks like—not just the highlight reel? 🤍
