One of the top baristas in America let me raid his cupping table in Houston. I left with 2 coffees you can’t buy yet.

David Buehrer (@greenwaybarista) co-founded @greenwaycoffee in 2009 and still competes: 6th in the country at the 2022 US Barista Championship, and a 2026 national semifinalist. Greenway is the roaster behind Blacksmith (@bl4cksmith). The roastery itself is a warehouse in EaDo, a Loring in the back and a cupping table in the middle. David says the small lots roast on a Roest.

We cupped a table of coffees Greenway hasn’t released yet. David asked which ones I wanted and wrote the labels in marker. An anaerobic washed Ethiopian from the Rumudamo station (@dayebensacoffee), grown above 2,200 meters in Sidama. And a natural Chiroso from Black Moon Farm (@blackmoonfarmpanama) in Boquete, whose Chiroso has finished on the Best of Panama varietals podium 3 years running, 1st in 2024. Chiroso is a Colombian variety, and Black Moon is the only Panama grower of it I could find.

If you want Greenway’s small lots when they land, they run a monthly auction-and-micro-lot subscription on their site.

We tuck these clubs deep into cities’ iconic neighborhoods. And we’re so excited to open a neighborhood work club in East End.

A few weeks ago, we drove the long and lonely road (2 hours) from Austin to Houston to visit some of our coffee friends there.

As always they were amazing hosts and the city of Houston did its best magic trick of asking us to closing our eyes, spin around, and point and finding amazing restaurants.

Thanks for having us!
