🍎🤎 The perfect kitchen sidekick for fall!

Nothing makes your whole house smell better than homemade apple butter simmering away with fresh apples, cinnamon, and warm fall spices. It’s cozy, easy to make, and one of my favorite things to have on hand for fall baking!

I love using it in seasonal desserts like apple tarts and muffins, but it’s just as delicious spread over warm bread or biscuits!

HOMEMADE APPLE BUTTER 🍎

Ingredients

• 4 lbs chopped apples
• 3 tbsp brown sugar
• 1 tbsp white sugar
• 1 heaping tbsp REAL maple syrup
• 1½ tbsp fresh lemon juice
• 1½ tsp ground cinnamon
• ½ tsp ground nutmeg
• ¼ tsp ground cloves
• ¼ tsp kosher salt
• ½ cup water

Directions

Add all ingredients to a large pot and stir to combine.

Bring to a gentle boil, then reduce the heat. Cover and simmer over low heat, stirring occasionally, until the apples are completely soft, about 30–45 minutes.

Blend until smooth using an immersion blender, or carefully transfer to a regular blender.

Simmer uncovered over low heat, stirring frequently, until thick, glossy, and spreadable. This can take another 30–60 minutes or longer, depending on how much moisture your apples release.

Transfer to clean containers and refrigerate promptly. Enjoy within 1–2 weeks, or freeze for longer storage.

Save this recipe for your fall baking lineup! 🍎👇

The sun is shining again in Austin, and it was the perfect day to spend shopping for cookbooks at First Light (one of those Austin places you’re glad someone told you about 😉).

Tucked inside the old Hyde Park post office, First Light Books feels like a little step back in time. I love their lattes, cookbooks and stationery, with something new to look at (or resist buying) every time.

A must-visit Austin spot!

it’s still 100° outside… but i’m making soup. 😂🍂🥣

This Spicy Italian Soup is officially making its way into my fall rotation. 🌶️🍲 It’s hearty, packed with veggies, and has just the right amount of spice from the Italian sausage.

Basically… everything you want in a bowl of soup when the weather finally decides to cooperate. 👏🏼

Ingredients👇
Olive oil
1 lb spicy Italian sausage
2 medium carrots, chopped
2–3 celery stalks, chopped
½ yellow onion, chopped
3 cups chopped kale
1 can petite diced tomatoes, with juice
1 can white beans, rinsed + drained
8 cups chicken stock
2 cups chickpea shell pasta
Freshly grated Parmesan
Salt + pepper to taste

Directions 👇
Heat a little olive oil in a large pot and brown the Italian sausage, breaking it up as it cooks.

Add the carrots, celery and onion and sauté for about 4–5 minutes, until the veggies begin to soften.

Add the diced tomatoes, white beans and chicken stock. Season with salt and pepper, then bring everything to a simmer.

Add the chickpea pasta and cook according to the package directions, until tender.

Stir in the kale during the last few minutes and let it wilt into the soup.

Ladle into bowls and finish with plenty of freshly grated Parmesan. 🤌🏼

SAVE this one for the first chilly night because you’re going to want it! 🍂🥣

First soccer practice for this diva, and Aunt Sis & Uncle Bubs wouldn’t miss it for the world! 😂⚽️

We’re hopeful Hadlee will warm up to the field, but I couldn’t stop laughing at her only commentary: “Haddie hot.” 😂

Same, girl. Same.

Did you know that mangoes are a highly versatile culinary ingredient because of their ability to pair beautifully with both sweet and savory flavors?

That inspired me to get creative with them! 🔥🥭🌶️
And this mango-centric recipe is exactly that.

🥭 Here’s what you need:

1.5–2 lbs chicken breast
2 large ripe mangoes
2 limes
Cilantro
1 Serrano pepper
2 jalapeños
1 red onion
1 bulb garlic
1 Tbsp olive oil
1 Tbsp honey
½ tsp paprika
½ tsp cumin
½ tsp chili powder
Salt + pepper to taste

🥭 Here’s how you make it:

Butterfly your chicken breasts and pound them to an even thickness.

In a medium-sized bowl, add:

1 large ripe mango, mashed or blended
Juice of 1 lime
1 chopped, deseeded Serrano pepper
1 chopped, deseeded jalapeño
1 Tbsp olive oil
1 Tbsp honey
1 Tbsp minced garlic
½ tsp paprika
½ tsp cumin
½ tsp chili powder
½ tsp salt
¼ tsp black pepper

Mix well, then add your chicken and coat thoroughly.

Cover and marinate for 30–60 minutes. DO NOT over-marinate!

While the chicken marinates…

🥭 Make mango salsa:

1 chopped ripe mango
¼ red onion, finely diced
1 jalapeño, deseeded and finely diced
Juice of 1 lime
Fresh chopped cilantro
Salt + pepper to taste

Mix everything together and set aside.

🥭 Cook chicken: (Don’t come for me for using a cast iron skillet on my stovetop. I choose to live recklessly. 🤪)

Remove the chicken from the marinade and pat it dry. This helps you get a better sear.

Heat 2 Tbsp of a high-smoke-point oil in a cast iron skillet over medium-high heat.

Add the chicken and cook for about 4–5 minutes on the first side, flipping once it releases easily from the pan.

Cook for another 4–5 minutes on the second side, or until the thickest part reaches 165°F on a meat thermometer.

Transfer to a plate and let the chicken rest for 5 minutes before chopping into bite-sized cubes.

🥥🥑 BUILD YOUR BOWL: Start with a bed of coconut jasmine rice (I added cilantro), then add your spicy mango chicken, fresh mango salsa and sliced avocado.

Top it all with my Mango Serrano Sauce for the perfect sweet + spicy punch. Recipe on that coming this week! 🔥
